A little info on Apples
Apples are in the Rose family (Rosaceae) and is one of the most widely cultivated tree fruits that are used by humans. The Apple tree originated in Western Asia, and there are more than 7,500 known cultivars of apples. At least 55 million tons of apples were grown worldwide in 2005 with a value of about $10 Billion Dollars. The USA is the second leading producer of apples with more than 7.5% of world production; whereas China produces about 35%
Research has suggested that apples may reduce the risk of many different kinds of cancers. They contain a small amount of Vitamin C but are rich in antioxidant compounds. Some studies have shown that apples may also help with heart disease. They do not have any cholesterol; they have fiber which reduces cholesterol by preventing reabsorption and are bulky for their caloric content.
Apples seeds are mildly poisonous, containing a small amount of amygdalin a cyanogenic glycoside. There is not enough to be dangerous to humans, but can deter birds.

Homemade Apple Butter

Ingredients
- 5 lbs. apples-peeled
- cored and diced
- 1 3/4 cup of packed brown sugar
- 1/2 cup of apple juice
- 1 teaspoon of cinnamon
- 1 teaspoon of nutmeg
- 1 teaspoon of allspice
- 1/2 teaspoon cloves
Instructions
Place all of the ingredients into a large crock pot, cover and cook on high for about 4 hours. Use a potato masher and mash the apples in the crock pot-do not worry if they all do not mash that is not important at this moment.
Cook the mashed apples for another 2 to 3 hours making sure the apples are completely tender. Use a hand blender and puree the apples until they are smooth and creamy. You want the apples to be thick, but not clumpy-remember the apple butter will thicken as it cools. If by chance it is too thick, you can thin it by adding a little more apple juice and mixing it very good.
For this recipe, I used 8-1/2 pint canning jars. Make sure your jars are washed good, and you have new seals. I have spoken to others who reuse their canning seals but I personally do not do that. Place the jars, the lids and the seals into a pot and heat them up. Fill with the jars one at a time with the apple butter, place the seal on the jar and lightly place on the lid. Be extra careful and make sure there is no apple butter on the rim of the jar, this can cause bacteria. Place the filled jars back into your canning pot, cover the pot and water bathe for 25 minutes. I put enough water in the pot to cover the jars half way.
Set a towel on your counter, and place the jars on it once the 25 minutes is up. The best sound is hearing the jars "Ping" one by one. Afterwards, tighten the lids and allow setting there until they are completely cooled.

Apple-Carrot Cupcakes
Ingredients
- Peel and Core two apples
- and one or two carrots and place them in the food processor until they are chopped.
- 1 1/4 cups of All purpose Flour
- 1/4 cup of Milled Flax Seed
- 1/2 cup of Oatmeal (I grind my mine to make my own oat flour)
- 1 large chopped apples
- 1 large chopped carrots
- 1/4 cup of coconut
- 2/3 cup of Silk Almond Milk
- 1 cup brown sugar
- 1/4 cup canola oil
- 3 egg whites
- 3 teaspoons Sodium Free Baking Powder
- 2 teaspoons of organic cinnamon
- 1 teaspoon of almond extract
Instructions
Mix together all of your dry ingredients, then add your wet ingredients. Stir well but do not over mix because they will be tough. If by chance the batter seems a little dry add a little more almond milk.
Spray your cupcake papers with a light oil (better to be safe than sorry) and fill the cups 3/4 full. Place in the over on 350 degrees for 25-30 minutes. When you take them out of the oven sprinkle with powdered sugar.

This recipe was made for the family during our trips to Michigan due to family illness. One of the neighbors of my husbands family made this wonderful dessert for us on two separate occasions. The meal and this dessert was so appreciated, words cannot explain how thoughtful it was for all us during that time.

Ingredients
- 2 cups buttermilk baking mix
- 3/4 cup milk
- 1/2 cup sugar
- 2 eggs
- 6-8 medium apples
- peeled and sliced
- 1/4 cup butter or margarine
- melted
- 2/3 cup sugar
- 1 1/2 teaspoon cinnamon
- 1/3 cup light cream
Instructions
Mix buttermilk baking mix, milk, sugar and eggs together and spread in a greased 9 x 13 inch baking pan. Arrange apple slices evenly over the top. Drizzle apples with melted butter. Stir sugar and cinnamon together and sprinkle overall. Drizzle with cream. Bake in preheated 350 degree oven 35-40 minutes. Wonderful served still-arm. Scoop out with a large spoon to serve.
