Make This Wonderful Homemade Autumn Cheesecake
Autumn Cheesecake is a modern British recipe for a classic cheesecake with a biscuit (cookie) crust topped with a cream cheese, egg and sugar filling and finished with an apple, cinnamon and pecan nut topping. Autumn Cheesecake Recipe
List of Ingredients:
1 cup graham cracker crumbs
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
4 cups peeled and thinly sliced apples
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup pecans, chopped
Steps Needed to Make Autumn Cheesecake:
Preheat oven to 350°F. Combine the graham cracker crumbs, 3 tablespoons sugar, 1/2 teaspoon cinnamon and butter or margarine; press onto bottom of a 9-inch spring form pan. Bake for 10 minutes.
Meanwhile, combine softened cream cheese and 1/2 cup sugar, with an electric mixer, mix at medium speed until well blended. Add the eggs, one at a time, mixing well after each addition. Blend in vanilla and pour over crust.
Toss sliced apples with 1/3 cup sugar and 1/2 teaspoon ground cinnamon. Spoon apple mixture over cream cheese layer; sprinkle with chopped pecans. Bake for 1 hour and 10 minutes. Loosen cake from rim of pan; cool completely before removing rim of pan. Chill.
