What is an Avocado?
The avocado (Persea americana) is a tree native to Puebla, Mexico, classified in the flowering plant family Lauraceae along with cinnamon, camphor and bay laurel. Avocado or alligator pear also refers to the fruit (a large berry that contains a large seed) of the tree, which may be pear-shaped, egg-shaped or spherical.Avocados are a commercially valuable fruit and are cultivated in tropical climates throughout the world (and some temperate ones, such as California), producing a green-skinned, pear-shaped fruit that ripens after harvesting. Trees are partially self-pollinating and often are propagated through grafting to maintain a predictable quality and quantity of the fruit.
Guacamole Dip Recipe

Ingredients
- 3 Medium Avocados (peeled and pitted)
- 1 Tablespon of Lime Juice (or squeeze half of a lime fruit)
- 1/2 Cup of Finely Chopped Red Onion
- 1/2 Teaspoon of Salt
- 1/8 Teaspoon Black Pepper
- 2 Tomatoes (seeds removed and finely chopped)
Instructions
Mash avocados; fold in chopped vegetables and stir in lime juice and salt to taste.
Cream Cheese Avocado Dip Recipe
- Serves: 2
- Prep Time: 4 Minutes

Ingredients
- 1 Medium Avocado (peeled and pitted)
- 1/2 Cup Cream Cheese (softened)
- 1/4 Teaspoon Chopped Chives
- 1 Tablespoon of Lemon Juice or Lime Juice
- 1 Tablespoon of 1% Milk
- 1/4 Teaspoon Salt
- 1/8 Teaspoon Black Pepper
Instructions
Chop avocado and mash together with cream cheese. Mix in chives, lemor or lime juice and milk. Salt and Pepper to taste. Place in fridge to chill for 1/2 hour. Serve chilled with cucumbers or other veggies.

Ingredients
- 2 Cups Refried Beans
- 1 Strip of Bacon (cooked and minced) or 1 Teaspoon Bacon fat
- 1 Teaspoon Chipolte Powder
- 1/4 Teaspoon Ground Cumin
- 1 Cup of Shredded Cheddar or Monterey Jack cheese
- 1/4 Cup Chopped Green Anaheim Chiles (canned)
- 1 Avocado (peeled and pitted and chopped)
- 1 Chopped Tomato (seeds removed)
- 1/3 Cup Sour Cream
- 1/2 Cup of Black Olives (pitted and sliced)
Instructions
1 Heat the refried beans in a medium sauté pan or cast iron skillet. Stir in enough water to get a creamy, easily dip-able consistency, about 1/4 of a cup. The taste of refried beans is greatly enhanced by bacon fat; we'll add a teaspoon to canned beans or a tablespoon or more to taste if we are making the beans from scratch. If you don't have bacon fat, you can cook up a strip of bacon, chop it up fine and add that to the beans. If you are trying to avoid pork, note that most canned refried beans are made with added lard, so check the ingredients. You can use olive oil instead, to help the consistency of the beans.
Mix in the chipotle chili powder (or Tabasco, or adobo, or regular chili powder) and cumin to taste. Note that the avocados and the sour cream will cool down the spiciness of the beans considerably, so you can afford to be a bit more spicy than you might think. Stir in salt to taste, depending on how salted your refried beans are to begin with, and depending on how salty the tortilla chips are that you are serving with the dip.
2 Once the beans are hot and bubbly, spread them over the bottom of a warmed serving dish. Immediately add the shredded cheese so that the heat from the beans helps melt the cheese. (The cheese doesn't need to be completely melted, but even if it is just a little, it will help the dip stay on the chip.)
3 Layer on the chopped green chilies, chopped avocado, chopped tomato. Spoon on the sour cream (or crema Mexicana, crema fresca, or even cream fraiche). Top with sliced green onions and olives.
Serve immediately with tortilla chips.
Tomato and Avocado Dip Recipe

- Total Time: 10 Minutes
Ingredients
- 2 Large Ripe Avocados (peeled and pitted)
- 16 Ounces of Sour Cream
- 2 Tomatoes (cored and seeds removed and chopped)
- 4 Green Onions (chopped)
- 4 Teaspoons Lemon Juice
Instructions
Cut avocado into chunks; place in food processor with sour cream, tomato, green onion and lemon juice. Pulse until smooth. Cover and refrigerate for an hour to chill. Serve with some tasty tortilla chips.
