What is gluten?

Gluten is a protein found in certain grains. When consumed, this protein triggers an autoimmune response in individuals who are gluten-intolerant. It's not fun.

It is present in wheat, barley, and rye. Since these are common grains in a Western European diet, it's difficult to avoid them without learning a new skill: reading the labels on food products. There are all sorts of foods with hidden gluten, all of which should be avoided while on a gluten-free diet.
