    I know we use "mouth-watering" often as a figure of speech, but my mouth literally started watering looking at the photos of your chili!. I love onions in my chili. I can't wait to give your recipe a try.

    I keep my food a litle spicey but not too much. I would eat it hotter but it can act up my acid reflux.

    I love a good hot chilli - I have to make a vegetarian version for Tadpole though, so I will try the secret ingredient on that as well. BTW Ajwain seeds make veggie curry or chilli taste more "meaty" - but you only need a tiny half teaspoon or it gets "medicinal". Hugs, Lisa :)

    I use beer in my crockpot roast .. I was led to believe that it tenderizes the meat. Whatever, I loved the taste. I'll be trying the chilli recipe for our next gathering. I belong to a big family so the recipe you have here will be good to use. I'm stopping by to leave my blessing on this lens.

    I don't have the recipe off hand, but my wife and I have won our family's chili cookoff contest 2 years in a row with the "Jamaican Me Crazy" chili recipe on AllRecipes(dot)com. But we also add a beer and 1 serrano pepper to the recipe to give it a little extra heat. Check it out when you get a chance.

    I discovered chili five years ago only so I'm still in the beginnings and you know, here, we don't often cook such foods. However, I like to eat chili, more particularly when others cook it. So, my question is... what time's dinner? Eheh. By the way, this looks quite yummy!

    I think I'm gonna try it for the CHILI cookoff that's at the bar near my home this SATURDAY!!! However, have you ever thought about adding BACON, ROUND STEAK, MUSTARD, & WORCHESTERSHIRE to the recipe? Just a thought?! I use that in mine!!!     Drooling over this cup of chili... The best cup of chili I ever had was at a small hole in the wall place in Jackson, Wyoming. Damn good chili! They used buffalo meat, fresh jalapenos, and fresh onions.

    My only "secret" ingredient is that I sometimes use ground turkey rather than ground beef. It's not quite as good, but it still works out.

    I heard a piece on NPR recently about adding Guinness to different dishes and I immediately thought of adding it to my chili. Might have to try that this weekend.

    Sadly, I have no ingredient but I'm so happy to have come here and discovered that I prepare the chili properly - certainly not as good as you do but not as an idiot either, lol. I just have to switch from Emmenthal and/or Gruyere to Cheddar - I'll do it, promised ;)

    Dom ... you know you have mentioned something quite important about cheese! You see, the choice of cheese would really MAKE the award-winning chili recipe the chef's special brand in that cheese is so unique as a topping ... and do NOT forget those onions too!

    This is pretty similar to one I make all the time. I put tonnes of ground coriander and cumin in it - plus an awesome addition of a few pieces of DARK CHOCOLATE (adds bitterness). Mostly I make it vegetarian (because it's quicker and easier - you can mix it up on the stove and have it ready to eat in 5 minutes), but I love the meaty version too. I love it hot!

    For the perfect dinner, I serve it with corn chips, salsa, lettuce, tomato, avocado, canned corn, tortillas, sour cream, guacamole and grated CHEESE! :)

    I like mild chili with not too many beans. I also mash my beans a bit.
    I've tried many versions but prefer Chili-O mix for seasoning.
    You really hit the nail on the head with the chopped onions and grated cheese.

    I used to add beer to my chili and somehow got away from it. Made this recipe and it was wonderful! I did add a couple of jalapeno peppers as we really like our chili HOT. Looks like the weather has cooled enough to make another batch. Thanks! Loved the lens and you great photos too!

    I have been looking for a good chili recipe. The one I use is one my mom gave me and it is pretty bland.
    I know beer really makes beef stew better so I would bet it is good for chili too.

    I've never heard of adding beer to chili, but I'm willing to try it! :-) Actually, my chili recipe is very simular to yours. My secret ingredient is taco sauce. I usually add it at the end, when you add your beer. Just use your favorite taco sauce (or salsa). I serve my chili with onions and cheese (like you) and tortilla chips or corn bread. So good on a cold winter's night!

    Julie, another fabulous lens! Love the look of it, and such an easy recipe that anyone can make. I'll bet it taste as good as it looks!

    I use tomato paste and whole tomatoes (canned if fresh aren't available) instead of tomato sauce and canned diced tomatoes. I always use fresh garlic and add fresh cilantro to the onion and cheese for the topping. If I can get it, I'll use Asadero and Chihuahua cheese instead of cheddar.

    5 stars for you, my luv! I don't have any cooking lens yet to lensroll you to, so I'll just join your faves until I do. Right now I'm working on all the Halloween stuff.

    This looks like a great chili. Whenever I make it, I have container after container of frozen leftovers. My favorite thing to do is to put them on hot dogs with cheddar - but you'll get full after just one of them. Squid Angel blessed!

    I add a little cinnamon sugar to counter the acidity of the tomato sauce. I also add diced tomatoes and stout beer. I grow jumbo cayennes which I use instead of dried. I also use a mix of kidney beans and pintos.

    I don't have a recipe to share or a secret ingredient ... but I wanted to say congrats on first prize! I would have been in a dead heat for last, I'll bet. The only chili I've made has been over a campfire in a cast iron kettle with a really basic recipe. Which actually makes me revise what I just said--my secret ingredient is the campfire part. Something about cooking and eating outdoors, sitting around a crackling fire with the stars twinkling and the comfortable summer night air makes my chili taste fab! :)

    Down in the Keys on Super Sunday, my chili had the first run (on). The neighbors from New York always brought me deer meat for the occasiion and it certainly scored that day.
