Backwards Day - January 31st

Ingredients

• 1/2 c. butter
• melted
• 2/3 c. dark brown sugar
• 1 can pineapple slices
• Maraschino cherries (about a dozen)
• 1 1/2 c. all-purpose flour
• 1 1/2 tsp. baking powder
• 1/2 tsp. salt
• 1/2 c. butter
• softened
• 2/3 c. sugar
• 2 large eggs
• 1 tsp. pure vanilla extract
• 3/4 c. milk

Instructions

1. Preheat the oven to 350 degrees.

2. In a small bowl, mix melted butter and brown sugar. Pour mixture into a greased 9-in. round cake pan and spread evenly. Arrange pineapple slices and maraschino cherries on top of the brown sugar mixture.

3. In a large mixing bowl, cream together the softened butter and sugar until fluffy. Beat eggs into the mixture one at a time. Add vanilla and mix well. Add the flour, baking powder, salt and milk and beat until mixture is thorough incorporated.

4. Pour cake batter into the pan on top of the pineapples and cherries. Bake for 45 and test with a toothpick or fork to make sure the cake is done. Cool for 15 minutes and then turn the cake upside down onto a plate or serving platter. Serve warm. Delicious!
