Bacon Fun

I have fond memories of growing up and having breakfast with my family. Sometimes my dad would make pancakes for everyone, and his extra-special pancakes were made with bacon. First he would fry up several strips of bacon and then break them into smaller pieces. Then he'd make the pancakes and place the small bacon pieces into the batter as it was cooking. For some reason it tastes even better than just eating plain pancakes with bacon on the side. Although if I have to be completely honest, I'm most likely going to have bacon pancakes with a side of bacon.

We also often had a dish called Smoky Pork n' Bean Bake. You take a casserole dish and pour in a can of pork n' beans, mix in some sauted onions and crumpled strips of crispy bacon. Then you place baked pork chops on top of the beans and sprinkle dark brown sugar on top of it all and drizzle it with yellow mustard, then bake it all in the oven until hot and bubbly. Basically it ends up being baked beans with pork chops and mustard on top. I always made it with extra, extra bacon. I haven't had this in years. I think it's time to make it again!
