Cinnamon Apple Baked Beans
Baked beans have long been a favorite for chilly winter dinners, summer picnics, and potluck dishes year round. This version adds the sweetness of honey and apples, along with the spiciness of cinnamon! It can be made in the crockpot or in your oven. On occasion, I've even made them in a skillet on the stovetop.

Cinnamon Apple Baked Beans Recipe
For The Oven

Cinnamon Apple Baked Beans - Oven Version
Ingredients:
3 medium apples
3 tablespoons water or apple juice
2 cans navy beans
1 can pinto beans
1 can kidney beans
½ cup of ketchup
1 teaspoon of salt
3/4 cup of honey
2 tablespoons of cinnamon (or to taste)
1. Cut apples into thin slices (about 1 mm or 1/16 in thick)
2. Place apple juice or water, and sliced apple bits into a saucepan. Bring to a boil on medium high, then turn down the heat to medium-low. Cook under the apples are tender - about 4 or 5 minutes. Stir occasionally.
3. While apples are cooking, drain beans in a strainer and rinse well with water.
4. Add beans, ketchup, salt, honey, and cinnamon to a 9" circular, a 8" square casserole dish, or a clay bean pot if you have one. Mix well.
5. Add apples (and any remaining water or juice) to dish, stirring in gently, being careful not the break the apples.
6. Cook at 350° for 30 to 45 minutes. About ten minutes before the time is up, I usually do a taste test and add more honey or cinnamon, if needed.

Cinnamon Apple Baked Beans - Crockpot Version
Ingredients:

If your crockpot holds more, feel free to add more cans of rinsed beans, along with more cinnamon and honey.

Cooking Dried Beans From Scratch

Cooking dried beans from scratch is both more economical, as well as healthier.
Here's the directions for how to do cook dried beans and other legumes.
1. Sort through beans and remove any that don't look good as well as any small pebbles that might be in the bag. Rinse beans well. I use a large size wire strainer basket to sort though the beans and then to rinse them. It allows you to spread the beans out so you can see and rinse them better. (see picture below)
2. Place beans in a pot and cover with plenty of water. (About 3 1/2 cups of water for every cup of dried beans.) Remove any beans that float. Do NOT add salt at this point.
3. Soak beans for 6 to 8 hours, or overnight, in a refrigerator
or
if you are short on time, bring water and beans to a boil and then quickly remove the pot from the heat and let soak one hour. The overnight method helps remove more of the complex sugars that sometimes cause flatulence, although both methods help some.
4. After the soaking period, drain the water out.
5. If you will be using the same pot to cook the beans, add water to cover the beans, cover with a lid, and bring the pot to a boil over medium heat. Do NOT add salt at this point either. When the water boils, reduce the heat to low and cook until tender. (Cooking beans too fast breaks their skins.) Here are some approximate cooking times for various types of beans.
Kidney Beans - 1 1/2 to 2 hours
Lima Beans - 1 1/2 hours
Baby Limas - 45 minutes to 1 hour
Navy Beans - 1 1/2 hours
Black Beans - 1 to 2 hours
Pinto Beans - 1 1/2 to 2 hours
Chick Peas - 3 hours
Lentils - 30 to 45 minutes (presoaking is not necessary)
Split Peas - 1 hour
Navy Beans - 1 to 1 1/2 hours
Great Northern Beans - 1 1/2 to 2 hours
6. After cooking the beans, you may add salt and use them in any recipe you like. (If you add salt before the beans are tender, they may never completely soften.) It's nice to keep some beans on hand in the refrigerator to quickly add to a soup, or burrito, or serve with some leftover rice for an easy lunch.
7. Some recipes call for precooking the beans before adding them to a recipe, and others allow you to cook the beans just once, along with all the other ingredients. Follow the directions for your specific recipe, and/or the directions that came with your beanpot.
Note: Old beans may take considerably more time to cook.

Apple Peelers - Corers - Slicers!
Apple peelers aren't a necessity, but they do make the job of preparing apples easier, especially when you have several apples to do! Most types either clamp or suction onto the counter or table and then not only peel the apples, but core and slice them too! These are great for cooking things such as Cinnamon Apple Baked Beans, Apple Pie, Apple Cobbler, and many other recipes with apples in them.

Curry Baked Beans

2 cans Great Northern Beans, rinsed
1 carrot
1/2 onion, chopped
1 apple, peeled and chopped in thin pieces
1/4 cup raisins
1/2 cup honey
1 TBSP ketchup
1/4 cut water
1/2 tsp curry
1/4 tsp salt
sprinkle of pepper (to taste)
Saute carrot and onion in a little oil until tender. Place apple pieces into a casserole dish and and cook in the oven at 350 for about 5 minutes, or until tender, while you are rinsing and straining the beans. When the apple pieces are tender (test them by poking them gently with a fork), add the carrots, onions, rinsed beans, and all the other ingredients to the casserole dish and bake at 350 for 30 minutes. Serves 2 as a main dish.

The Strainer Baskets I Use For Rinsing Beans

I use a 6 inch strainer basket with a handle when I'm rinsing canned beans. After rinsing the beans under running water, I sit the strainer full of beans on top of the now empty can. That allows the water to continue to drain out without you having to hold it and without making a mess all over the counter!
I use a large strainer basket when I'm sorting and rinsing dried beans, as it provides more surface area, making sorting through the beans much easier! First I use it's adjustable bars to hold it in place over the sink. Then I pour the beans into the strainer, using the sprayer attachment on the sink to rinse the beans. After rinsing the beans, I leave the strainer in place just above the sink for a minute or two to allow the water to drip into the sink. Then I pick the strainer basket up and pour the beans into my pot. This large sized strainer basket really makes the process a snap!
Oxo Good Grips 6-Inch Double Rod Strainer
This is what I use for rinsing canned beans. I use it for rinsing or straining the liquid off of other things too.
The wide stainless- steel brim and loop make it easy for the strainer to rest on almost any bowl or pot, and the double-rod construction makes it extra sturdy.
Polder 6631-75 Stainless-Steel Sink Strainer with Extending Rubber-Grip Arms
This is what I used for rinsing dried beans. It's useful for rinsing the beans both before you soak them and after!
You can rinse fruits and vegetables or drain pasta with this stainless steel sink strainer. The unique hands-free design uses adjustable arms to hold the strainer over the sink, so your hands are free to chop veggies, pour pasta, etc.

Improving the Digestibility of Beans

Beans have complex sugars, called oligosaccharides, which are not easily broken down by enzymes. This is what causes some people to have digestive problems with beans. But eating beans frequently, rather than only ever so often, helps solve this problem as the enzymes in our bodies gradually adjust and become better able to digest those sugars.
Here are a few more tips:
When cooking beans from scratch, rinse the beans after the soaking period and refill the pot with new water before cooking. Doing so gets rid of some of the complex sugars which cause the gas. Make sure to cook the beans under they are fully tender too, as undercooked beans tend to cause more discomfort.
There are several things that can be added to beans which helps as well. Savory, ginger, marjoram and several other herbs and spices improve the digestibility of beans. Kombu (a type of seaweed), and a potato cooked along with the beans and then thrown away, are also reported to make a difference.

Nutritional Benefits of Beans
Beans are very healthy foods!
Beans are good sources of phytochemicals and phytoestrogens which may provide some protection against breast cancer. They are a great source of fiber. In fact, beans have almost as much fiber as bran! They can help you lower cholesterol and insulin sensitivity, and maintain stable blood glucose levels. It is believed that beans may also help people prevent colon cancer.
Darker colored beans, such as black beans, pinto beans, red beans, and kidney beans, have high levels of healthy antioxidants. Antioxidants curtail the cell damaging action of free radicals.

Speedy Vegetarian Baked Beans
These can be made on the stovetop in a flash!

Speedy Vegetarian Baked Beans
1 28 oz can vegetarian baked beans (or 2 14.5 oz cans)
Mustard to taste (I use about a tsp and a half.)
Ketchup to taste (I use about 1/4 cup).
Add all ingredients to a skillet and heat on a burner on medium on your stove until warm. Stir occasionally to keep the beans from sticking. What could be faster than that? Yet they are quite delicious! When your child is starving NOW, you can whip these up in no time!

These are still fast though! Yummy too!

These use a little instant coffee, and can be cooked on the stovetop.
2 tsp Mustard
1/4 cup Ketchup
1/2 small onion, chopped

1 tsp instant coffee (dry)
oil for sauteing onion
Saute onions in oil in skillet until lightly brown. Add beans, mustard, ketchup, instant coffee and brown sugar. Heat on a burner on medium on your stove until warm. Stir occasionally to keep the beans from sticking.

- You could try simply omitting the ketchup. The main flavor comes from the cinnamon, apple, and honey.
Did you presoak your beans when you tried before? Also, do you live in a higher elevation? That can make it harder to soften the beans.

- Fantastic resource! I will have to spend some time looking through all of this. The cinnamon Apple Baked Beans sound wonderful... I just need to replace the ketchup with something that doesn't contain tomatoes!
I think you have inspired me to try using dried beans again... I have never gotten them to soften.
