Easy Baked Cod with a Crunchy Walnut Crust

Oven baked fish recipes always make great dinners. It does not take long to bake fish to perfection so this is a great idea if you are thinking about what to make for a busy weeknight supper. The following baked fish recipe is delicious served with rice and zucchini or green beans. Some tomato salsa on the side is also very good. You can swap the cod for tilapia, basa fish, or another type if you like, although fish with big flakes is an especially good choice for easy fish recipes which are done in the oven.
This recipe features a crunchy topping which is made with thyme, parsley and walnuts, as well as breadcrumbs. If you like, you can add some grated parmesan cheese to the mixture, or even some cheddar cheese. This simple topping crisps up while the fish cooks but if you want a crunchier result you can broil it for a couple of minutes at the end of the cooking time.
The cod is done when it is firm but not too soft and when it is not glossy any more. Do not overcook fish because it goes dry and rubbery. Easy Baked Cod with a Crunchy Walnut Crust
Ingredients
- 2 skinless cod filets
- ½ teaspoon dried thyme
- 1 slice white bread without crusts
- 1 tablespoon olive oil
- 6 chopped walnut halves
- Salt and black pepper to taste
- Butter as needed
- 1 tablespoon chopped parsley plus fresh parsley sprigs for garnish
Instructions
Cut the bread into cubes and put them in the food processor.
Process them until they start to crumble, then add the thyme and parsley and process until the mixture is quite fine.
Season with salt and pepper and add the walnut halves.
Process again to crush the walnuts a bit, and then transfer the mixture to a bowl.
Add the olive oil, a little at a time, to make the crumb mixture moist.
It should be slightly moist, not too wet.
Season the fish with salt and pepper and then cover the skinned side with the breadcrumb mixture.
Put the cod in a baking dish and chill the filets for up to 4 hours, until you are ready to cook them.
Preheat the oven to 400 degrees F and bake the cod for 10 minutes or until it looks opaque (not glossy any more).
You can finish it off under the broiler if you like, to make the crust extra crispy.
Garnish with fresh parsley sprigs.

Follow this wholesome dinner with a fruit trifle topped with fresh whipped cream. Expect glowing praise and appreciation from family and friends who will think you toiled tirelessly to prepare this feast.
Humorously, only you will know you have provided them with enough nutrients and fiber rich food for their growing bodies. This easy to prepare recipe will be a hit with family or friends. Ingredients
- One firm fleshed fish fillet per person served
- One half cup half and half
- Two teaspoons butter
- One teaspoon well drained capers
- Dijon mustard
- one and a half teaspoon
- Small lemon seeded and squeezed
- Fresh ground pepper
- to your taste
- Fresh parsley for colorful savory garnish
Instructions
Place the fish in a medium casserole dish you have gently sprayed with canola spray. Pour half and half over the fish and marinate for twenty five minutes; tightly covered in the refrigerator.
Meanwhile, preheat your oven to three hundred seventy five degrees Fahrenheit. Make sure your oven rack is in the middle of your oven.
Next, melt the butter in a small microwave safe dish.
Remove melted butter add the capers, mustard and juice of one lemon and then add your pepper. Whisk until it is a smooth sauce.
Cook an additional one to two minutes in the microwave, until slightly thickened.
Remove sauce from microwave.
Remove fish from oven and Pre-heat the broiler.
When broiler is hot put fish back in the oven for another five or ten minutes, until fish is a light to medium brown.
Pour sauce over the fish.
Serve immediately on a warmed plate.
Gently crush fresh sprigs of parsley being careful not to damage the leaves but just enough to release the natural aroma of the fresh herb.
Gingerly pile the parsley with stems on top of each piece of golden browned fish for garnish.

Bake it at 450 degrees F until it is done. When fish is done, it is opaque and will flake easily. You can bake your fish with some chopped vegetables, such as mushrooms, broccoli, or zucchini, to make a complete meal. Denser veggies like carrots or potatoes should be parboiled first.
