Baked Omelet
Egg omelets are the best choice for a leisurely weekend breakfast when there is time to spare. Omelets can be made anyway you choose and have as many or as little ingredients as you desire.
There are no wrong ingredients and omelets go great by themselves, with a slice of toast or for the he-man or she-woman appetite with hash browns, bacon, sausage, and pancakes with butter and syrup, or biscuits and sausage gravy. Omelets baked in the oven come out easy and oh so cheesy.
The vegetables are delightfully crisp tender and because they are melded with the melted cheese kids love them. Furth, when you bake your omelet in the oven instead of on top of the stove with oil you are making a healthier omelet for your family.
Additionally, when you serve fresh seasonal fruit cups as a side you are adding lots of vitamin c to an already wonderful breakfast.

- I liked the idea of baking the omelet. I use my convection over for many dishes and like to get away from the stove top pan method. I'll try it.
