Mini Cupcakes From Bakerella

Cupcake bites are very easy and fun to make. It can get a little messy, but the results are worth it. Ok, here is what I use to make my cupcake bites:

First,

* Cake Mix (your favorite flavor)
* 13x9 cake mold
* 1 can of Cream Cheese frosting
* Chocolate Bark and White Chocolate bark
* Candy Melts (any color you like)
* sprinkles or M&M's
* Flower shaped cookie cutter (Bakerella suggests that you use the 1.25" wide X .75" tall).

Now, bake the cake as you would regularly do. And let it cool for awhile. After the cake is nice and cool, you will then crumble the cake into a fine consistency, and add the frosting to it. Mix the frosting with the cake until it's soft and moist. With your hands, roll the mixture into little balls and place them on a cookie sheet on wax paper.

Cover them with plastic paper in refrigerate for a couple of hours, until it's nice and firm.

Take them out of the fridge and with the cookie cutter press softly until making the shape of a cupcake.

Return again to the freezer for about 20 more minutes. Meanwhile, get your chocolate or white chocolate bark and melt them.

Take out of the freezer and get ready to dip!

First, dip the bottom part of the cupcake with chocolate, and place them up side down until they dry out.

Later, when they are dry, dip the upper side of the cupcake on the candy melts bowl. It could be white or pink or any color you choose.

* When still wet on top, sprinkler and put the M&M's.
