    that's my story too....

I've thrown out a lot of aged bananas - usually with no bread in the house - or there's too much old bread and no bananas

Good to have this recipe hand if the food planets ever do align.

I love that this banana bread uses double the bananas that most recipes ask for. I put them in muffin tins because I didn't have a bread pan and put crushed cinnamon toast crunch on top of each muffin with a sliver of butter for an added streusel topping. So yummy!
  • checkyourvibe Sep 29, 2011 @ 2:42 pm | delete

This looks like a good recipe to try - and to drink with coffee from my Coffee House! If this recipe turns out good, maybe I'll offer it to my customers! (with a link to this page and with your permission, of course!)

I love Banana Bread! I prefer mine with pecans. My mother's recipe calls for shortening, but if I want it to be a bit lighter I will substitute that with butter.

I love love love this banana bread recipe! I have shared it with everyone I know! I tried making the banana bread with margarine instead of butter just to see what the difference was and try to make it a little healthier (I know it isn't a huge difference, it still isn't healthy)! I found that the bread was even more moist than when I made it with butter! I now use margarine every time! Anyone who loves this recipe, try it with margarine, you'll be amazed at the difference! Thank you for this amazing recipe! I have been looking for a good one for years! I will continue to pass this one on for sure!

this banana bread recipe is sooo good. i make it all the time. i use really ripe bananas that intensitfy the flavour. i only ever add 3/4 cup sugar and it taste sweet enough. i love the smell it fills the whole house with and the only disappointment is having to wait an hour to eat some! whoever made this recipe is a legend!

The most common cause of burning is leaving the bread to rise for to long. This is easily done if you are unable to control the temperature of the environment where the bread is rising. You might learn some bread making tips when you're actually doing the process.

I put nuts AND sultanas soaked in rum in mine. 'nuke' the sultanas in the microwave for 30 seconds in just enough rum to cover them then leave them for a few hours before you make the cake. They will absorb almost all of it. The rum will boil in the microwave and any remaining alcohol will cook off, so teetotallers need not worry. You could also use Jack Daniels bourbon or similar instead of rum.

I hope to make something that looks just as moist and just as yummy-looking. I love bananas. Just the excuse I need to go and get some food shopping done. Some bananas and some nuts to go with it. I can't wait!
