Delicious Banana Chocolate Chip Bread
So, there they are, in the fruit bowl, slowly changing from greenish yellow- to yellow- to kind of bruised looking. At this point you have 2 choices.... chuck 'em in the compost bin... or make banana bread. I add chocolate chips to my banana bread, mainly because EVERYTHING tastes better when you add chocolate.
You can add nuts if you want too... (but chocolate is better...)
This is an easy Banana Bread recipe that you can throw together quickly. I use the same recipe for muffins... just adjust the baking time.
And it works as a quick "oh no we're late for school..soccer..tennis..girl scouts... but we haven't eaten yet' fix.
Bake it up, fill the house with good smells, and fill your tummy with yummy Banana Chocolate Chip Bread.

What to do with a bad banana...
Once my bananas start to go, I put them in the freezer. I even have a special "old banana" shelf (it's the top one). Then, when the mood strikes me to make banana bread (mostly that happens when a frozen banana falls off that top shelf and lands on my foot) I pull out 3 or 4, and put them on the counter in a bowl to thaw.Now... they may have looked gross frozen, but they look downright NASTY when they are thawed. Seriously disgusting. And they feel all wet and squishy. DON'T PANIC! They are PERFECT for Banana Bread. Just cut off the end with scissors, and squeeze the mushy stuff out into the mixing bowl.
Let the kids help... the gross out factor makes them happy.
Banana Chocolate Chip Bread
serve over ice cream, and it's a banana split!

- Serves: makes 1 loaf
- Prep Time: 15 min
- Total Time: 1 hour 15 min
You need 3 or 4 really nasty looking bananas for this recipe. Add chocolate chips to make it all taste wonderful.
Yes, you can add nuts too or instead... substitute a 1/2 cup of nuts for a 1/2 cup of chocolate chips...
Ingredients
- 3 or 4 Bananas- Brown and nasty is perfect
- 1 cup Sugar- maybe a little more
- 1 stick Butter - melted
- 2 eggs
- 1 tsp. vanilla extract
- 1 1/2 cups unbleached flour
- 1 1/2 tsp. baking soda
- 1/2 cup semi-sweet chocolate chips- ok... maybe a little more....
Instructions
Grease a 9 x 5 x 3 inch loaf pan. If you want to hedge your bets, cut a piece of parchment paper to fit in the bottom of the pan. Spray it.
Heat oven to 350 degrees
Put the bananas (the insides, not the peel) and the sugar in a mixing bowl. Mix on HIGH for a few minutes. Add the melted, cooled butter, eggs, and the vanilla. Mix it up, scrape down the sides of the bowl.
Add baking soda and flour, combine.
Add chocolate chips, mix it all up.
Scrape the dough into the loaf pan. Bake for 1 hour, until browned on top, and a toothpick stuck in it comes out clean.
Let the pan cool on a rack for 20 minutes or so.
Turn out onto rack to cool completely.
Slice and eat
Got to tell you, this one makes the house smell great, and tastes wonderful warm.

This Recipe Keeps Well
Banana Bread is a great Keeper. You can wrap it up in plastic wrap, then foil, and stick it in the freezer until until you need it.

- I agree with AJ, sometimes bananas just get a bit too ripe and perfumy, but then they can still be used to make banana bread. This recipe sounds good, nicely done, blessed.

- I actually love bananas, but there are always times when they are too ripe to eat. I love banana bread too, but have never made it myself. I've always wanted to try making banana bread and hopefully will someday soon. Blessed! :)
