Banana Muffin Recipe
Ingredients
- 3 riped mashed bananas
- 1 cup sugar
- 1 egg
- 2 cups plain flour
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 1 tsp baking soda
Instructions
1. Preheat oven to 350F.
2. In a mixing bowl, whisk together the egg, oil and sugar until creamy and light yellow.
3. Add in the bananas and mix well. Toss the flour, baking soda and salt. Mix until nice and smooth.
4. Spray a muffin tin with vegetable oil and scoop the banana batter ¾ full.
5. Bake into oven for 20 minutes. Then cover muffins with foil and bake for another 7 minutes.
6. Muffin is done when it turns golden brown or when toothpick inserted at the center comes out clean.
