Banana bread is truly a comfort food...

There's nothing quite like a warm loaf of banana bread straight from the oven just waiting to be sliced open!

So many recipes, so many alterations...add walnuts or not...add chocolate chips or don't...do you butter your bread or skip it?

I think banana bread is one of the ultimate comfort foods and is best eaten on a cold day, fresh from the oven, smothered in melting butter with a large glass of milk! Yum!

I hope you enjoy these banana bread recipes and walk away with 1 or 2 you want to try!

Here is 1 of my personal Banana Bread Recipes...

Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup finely chopped walnuts (optional)
1 egg
3/4 cup milk
1/4 cup vegetable oil
1 1/2 cups mashed bananas
pinch of cinnamon
splash of vanilla extract (cap full)

Directions:
With a fork, stir the flour with the granulated sugar, add the baking powder, baking soda and salt.

Stir in your optional chopped walnuts...you may want to substitute with raisins or chocolate chips, especially for those nut-free school lunches!

In a separate bowl, whisk the egg, milk and oil together and stir in the mashed bananas.

Pour wet ingredients into center of dry ingredients and stir just until mixed. (*It will be lumpy). Throw in a pinch of cinnamon and a cap full of vanilla extract...yum!

Turn into a greased 9x5" loaf pan.

Bake at 350*F (180*C) for approx 65 minutes or until a toothpick inserted into the center comes out clean.

Makes approx 12 slices

Freezer Tip!

Got overripe bananas but not in the mood to make banana bread?...stick those 1/2 yellow 1/2 brown bananas in the freezer!...when you are ready, pull them out, let them thaw then bake!

Never done this before?
Tip: the banana skins will turn totally brown, almost black...this is OK!

Here's my 2nd favorite Banana Bread recipe... 


Ingredients:
2 eggs
3/4 cup (175 ml) granulated sugar
1/2 cup (125 ml) vegetable oil
1 cup (250 ml) mashed overripe bananas (3 medium)
1/2 cup plain yogurt or sour cream-low fat or regular
2 cups (500 ml) all-purpose flour
1 tsp (5 ml) each: baking soda & baking powder
1/2 tsp (2 ml) salt
pinch of cinnamon
cap full of vanilla

Directions:
In a large bowl beat the eggs, add the sugar, oil, bananas, vanilla and yogurt. Beat with electric mixer or whisk until thoroughly blended together.

In a smaller bowl, mix together the flour, baking soda, baking powder, cinnamon pinch and salt.

Add dry ingredients to wet banana mixture, stir until combined.

Pour into greased & floured 9x5 inch loaf pan.
Bake in pre-heated 350F oven for 55-65 minutes or until toothpick placed in center comes out clean.

Let cool completely & then EAT! Yum!
