We all have our favorite banana bread recipes. These are mine.

We like bread. We like bananas. Mix them together and you have one awesome treat. Banana bread recipes come in three basic categories. The traditional banana bread is a quick bread, meaning it is leavened with chemicals such as baking soda instead of yeast.  Banana bread leavened with yeast is the second category, of course. Then we have banana sweet bread, which is a yeast bread but sweetened as the name suggests.

If we expand the definition of our banana bread recipes, we can also include treats such as banana muffins, banana pancakes, banana scones and so forth. We won't even touch on banana cake. That's a whole different story, although an equally delicious story.

Banana Bread Recipes (Quick Bread) 

Banana Orange Nut Bread

Ingredients

1 cup sugar
1/2 cup oil
2 eggs
3 medium to large bananas
1 orange
1 cup chopped walnuts
2 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1/4 cup of milk, approximately

Method

Cut the bananas into chunks. Ripe bananas work best.

Grate the orange rind and squeeze the juice. Put juice and rind in cup and add enough milk to make 1/4 cup.

Beat the sugar and oil together. Add eggs and banana chunks and beat until the banana chunks have almost, but not entirely disappeared. Stir in the orange juice mixture. Add nuts and mix.

Mix together the dry ingredients and beat into the wet mixture, combining thoroughly. Add the vanilla and stir.

Butter a standard loaf pan and line with waxed paper. Spoon the batter into the pan and bake in a slow oven (about 275 degrees F) for about 80 minutes. Test for doneness. Remove from oven and cool in pan for 30 minutes. Then turn onto a cake rack to continue cooling. Can be frozen.

Banana Bread Recipes with Yeast 

Banana Nut Bread Recipes

You make this banana nut bread recipe in a bread machine. It's healthy and calls for whole wheat flour.

Ingredients
Optional but recommended: Bread Dough Enhancer. Use per manufacturer's instructions.
1 pkg yeast
3 cups whole wheat flour
3 tbsp Maple syrup.
1 tsp Maple extract (optional)
1/2 cup pecans
1 md ripe banana, sliced
1 tsp salt
1 cup warm water

Method
Put all the ingredientsinto the pan in the order listed. Select "whole wheat". Push "start."

When its finished baking, remove from the pan and enjoy eating your fragrant banana nut bread recipe.

Banana Bread Recipes: Sweet Bread 

Banana Chocolate Nut Bread in the bread machine

Kids love this one. This banana nut bread recipe makes one 1 lb. loaf

1/3 cup skim milk
1/3 cup mashed very ripe bananas
1 large egg
1 tablespoon butter or margarine
3/4 teaspoon salt
2 cups bread flour
1/4 cup semisweet chocolate pieces
1 1/2 teaspoons bread machine yeast

Method

Put all ingredients in the bread machine. Add the mashed bananas with the milk and add the chocolate with the flour.

Use the basic/white bread cycle on the light or medium/normal color setting.

Some bread machines will produce a smooth bread with a chocolate color. Other machines produce an attractive marbelihg.
