Practice, Practice, Practice...

If you're new to barbequing, chances are you've encountered some troubles when it comes to barbequing. Barbequing, like anything else, takes practice.

Learning from your errors, as well as the errors of other will help you learn quickly.

Cooking Spray 

Before you start cooking, spray your cooking surface area with a nonstick cooking spray.

This will stop your meat from sticking when you are rotating or taking it away. If your meat sticks and tears, you will lose a large amount of juice, and your meat may dry out.

Temperature 

Never place food on the grill until the temperature is correct.

The variation in temperatures will cause your food to dry out or burn. If you are using a charcoal grill, make sure that the coals are wholly gray before putting the meat on the grill. This will allow the temperatures to level out, and the majority of the lighter fluid to burn off.

Lighter Fluid 

Cooking with charcoal lighter fluid can be good or bad. The lighter fluid will cause the food you are cooking to taste different then with other types of grills.

As an alternative, trying to not use lighter fluid may cause a good deal of frustration due to the fact that charcoal can be hard if not impossible to light without lighter fluid.

Preparation 

You must properly prepare the meat, before cooking it. You should never attempt to cook meat on a grill when it is still frozen, or even partially frozen.

Thaw your meat by sitting it out about 12 to 24 hours before you plan on cooking it, or by thawing it in a microwave oven. If you meat is thawed, but in the refrigerator, set it out long enough for the meat to get to room temperature.

Grease 

Never jab your meat as it's cooking. Jabbing holes in meat will cause the juice within to leak into the bottom of the grill.

Not only will this make your food dry and unlikable in the end, but in the long run it also could possibly destroy your barbecue grill.

At the very least, it will cause a buildup of uninvited grease and juices on your grill, which will make cleanup harder.

Foil 

While using aluminium foil or tin foil will make cleaning more comfortable, it will cause your food to bear more of a fried taste than a barbecued taste sensation.

BBQ Secrets Revealed 

(I recommend Randy's book, but his free tips newsletter is brilliant too!)

Randy Pryor is a retired kentucky restaurant owner, and he reveals his Top 7 Amazing Barbecue Tips for free.

Just scroll past his message, to about one third of the way down the page, to a big yellow box titled 'Free BBQ Tips'.

You can ignore the letter he's written there, but it is a letter about his book, which is a VERY good resource. The tips are still free whether you buy his book or not (but you really should check it out because it's amazing).

Great lens. One secret to good BBQ is practice. Barbecue as much as possible and you'll get good at it. I worked in a restaurant that featured a lot of grilled items so I got really good at judging when things were ready. The other secret is preparation. Have your grill, tools and food ready to cook at the same time and things will go smoothly. Don't rush the cooking and you'll be the king of the grill.

Take a whole pineapple, split in four, rub it in hoisin sauce and brown sugar. Grill it for a few minutes on each side. The core will become tender and edible! Cook up some pork with it, brushing hoisin and brown sugar on it during cooking (don't marinate this one). It comes out excellent!
