New Mexico Barbecued Ribs Recipe
1 cDry Red Wine
1/3 cRed Chili Sauce
4 lb Beef Short Ribs
1/4 ts Pepper fresh Ground
1/2 ts Salt
1 ea Onion diced
1 ea Clove Garlic large minced
Combine all ingredients except ribs.Let sit for 15 minutes. Marinate ribs in sauce thoroughly.Sear 5 minutes on each side. Cove grill with heavy foil add ribs and spoon sauce over.
Cook for 5 minutes turn and spoon more sauce.Keep turning and saucing every 15 - 30 minutes until done.

Beer Mop Sauce For Meat
1/2 cup cider or white vinegar
1/4 cup vegetable oil
1/2 medium onion, chopped
2 garlic cloves, minced
2 tablespoons Texas Dry Rub
1 tablespoon Worcestershire sauce
Mix all together. Add up to 1/4 cup more oil when the food being smoked is lean and dry.
Al Roker's World Championship BBQ Rub
1/2 cup freshly ground black pepper
1/2 cup salt
1/2 cup adobo
3/4 cup paprika
3/4 cup chili powder
2 tablespoons each cinnamon and allspice
Mix all ingredients together mixing well. Store in an airtight container.
Use for slow cooked foods or as a spice for your meats and poultry.
Super great for barbecued chicken, wings or whatever.

Barbecue Chicken Sandwiches
1 large onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup chicken broth
Cracked black pepper, to taste
1 cup barbecue sauce
1 cup Monterey jack cheese, shredded
Place onion and bell peppers in crockpot and top with chicken thighs. Pour chicken broth over chicken. Season with cracked black pepper and cook on LOW for 6 to 8 hours.
At the end of cooking time, drain liquid from pot and shred chicken. Return chicken to the crockpot and mix in barbecue sauce. Cook another 30 minutes. Spoon mixture into split dinner rolls and top with shredded Monterey jack cheese.
Serves 12 to 15.

Barbecue Beef Ribs Recipe
3 cups Black Jack BBQ Sauce5 pounds Beef short ribs
Place ribs in a flat pan or dish. Pour sauce over ribs, turning so as to coat both sides; pierce meat with a large fork. Marinate for 8 hrs. turning once.
Remove ribs from marinade and brush off excess sauce to avoid burning Broil or cook over coals for 10 mins. Brush with marinade and cook 4-5 mins. more. Heat remaining sauce and serve with ribs.(Ribs may be cooked in a covered pan in a 350 deg. oven for 1 1/2 hours, if desired.)

Baby Back Ribs Recipe - from the Barbecue Web
Barbeque Roasted Pork
1 tb Season salt
8 Peppercorns
1 ts Nutmeg
1 ts Coriander
1 ts Allspice
1 tb Sage
1/2 cBrown sugar
3 lb Pork Center cut loin
Combine sage allspice coriander nutmeg peppercorns and season salt in food processor. Pulse until spices are combined. Pat dry pork roast and press spices on fat cap of roast.
Roast in dome bbq grill until 160F. internal temperature with indirect roasting. This can be done with a pan directly under the roast and coals placed on either side of pan.Roasting time should be about 90minutes.
During the last 30 minutes of roasting combine applesauce and brown sugar and coat top of roast.
Continue roasting until internal temperature is 170F. Apply applesauce mixture until all is used.Remove roast from grill and let set for 15 minutes before carving.

Barbecue Chicken with Lime Bbq Sauce
2 tb White vinegar
1/4 cCarrots - shredded
1/4 cFresh lime juice
3 ea Chicken breasts hvd & deboned
3 tb Brown sugar - packed
1/2 ts Salt
1 cCatsup
1 tb Dijon mustard
1 ea Clove garlic finely minced
1/4" dic 3 tb Soy sauce
1/4" dice
1 ea Med red bell pepper
1 ea Med onion
1 ts Butter 1 cCelery - 1/4 inch dice
Sweat the carrots in butter 5 minutes; then add the celery onion red pepper and garlic; meanwhile in a medium saucepan mix soy sauce chicken stock and vinegar; whisk in catsup Dijon mustard brown sugar and salt;heat to sier dissolving sugar and cook1 0 minutes;add vegetables and heat through remove from heat and stiring limejuice.
Sear chicken on both sides and place in shallow pan; pour marinade over; let marinate for atleast 30 minutes turning occasionally and basting. Pour off marinade into saucepan; heat to boiling; grill chicken basting until done;reduce sauce to half volume; serve over chicken. Serve withPotato or Apple Salad. Yield 6 servings.

Pork Barbeque Sauce
1/3 c. brown sugar
1 tbsp. Worcestershire
Hot sauce to taste
Rosemary (crumbled) to taste
Mix all ingredients together. A good brand of hot sauce for flavor is Louisiana hot sauce. Brush on pork spare ribs, steaks, or chops while barbequeing or baking.

1/4 cFinely slivered fresh basil
1/2 ts Freshly ground pepper
1/4 cDijon mustard with seeds
2 ts Olive oil
Combine all ingredients in a bowl. Mix thoroughly. Makes about 1/2cup.

Easy Barbecue Chicken
1 (8-10 oz.) jar apricot preserves1 sm. bottle Russian dressing (the pink kind)
1 pkg. dry onion soup mix
Pour over skinned chicken pieces. Bake at 350 degrees for 1 1/2 hours.

Barbecue Sauce for Basting
4 tb Lemon juice1/2 c Margarine or Butter
1/2 c Bacon drippings
1 ts Salt or to taste
2 ts Pepper
2 tb Worcestershire Sauce
2 ts Chili Powder
2 c Water
In a large saucepan combine margarine, bacon drippings, lemon juice and Worcestershire Sauce. Cook over low heat until butter/margarine melts.
Dissolve Chili Powder, Salt, Pepper and Garlic Powder in water and add to margarine mixture. Bring to a boil. Lower heat and sier for 15 minutes. Makes 3 1/2 cups.
Will serve to baste 5 lbs. brisket.
Beef Barbecue - Texan Style
1 md Onion; Finely Chopped
3Ribs Celery; Finely Chopped
1/4 c(1/2 Cube) Butter
1/2 ts Freshly Ground Black Pepper
1/2 ts Salt
1/4 cWorcestershire Sauce
1/2 cCider Vinegar
1 ts Paprika
1 cCatsup
1 md Fresh Or Canned Green Chile Seeded And Minced;
3 1/2 lb Beef Brisket
When the fire has burned down to hot coals spread to provide moderate heat and fit a drip pan in front of in the center of the coals. Place the brisket fat side up over the drip pan. Cover the grill and adjust the dampers to maintain slow steady heat. While the meat is cooking in a sauce pan combine all of the other ingredients blending well and sier for 10 minutes.After 1 hour baste the meat lightly with the sauce and turn the meat as needed to cook evenly. Replenish the fire as needed but don't pile the coals as the brisket should cook slowly. Cook 4 to 5 hours total until the meat almost falls apart. Sprinkle 2 to 3 handfuls of hickory chips that have been soaked in water over the coals.
Cover the grill or enclose the top of the meat in a sheet of foil tucked around the bottom edges of the meat and let the hickory smoke the meat for 10 to 15 minutes. Remove the cover and brush the meat with the sauce. Place the meat on a platter and slice.It will crumble. Serve the meat and the remaining sauce on split and buttered sandwich buns.
Any leftover sandwiches can be frozen and reheated in a Microwave or conventional oven or the shredded meat and sauce can be frozen together to reheatlater for sandwiches.
Cola Barbecue Sauce
1 bottle barbecue sauce
1 (10 ounce) Pepsi or Coca-Cola
1/2 cup (1 stick) margarine
Salt and pepper, to taste
Combine ingredients in iron skillet. Place meat in skillet; cover. Simmer for 45 minutes to 1 hour.
Thai Barbecued Chicken
8 Chicken thighs
1 tsp Tumeric -- ground
3 tbsp Fish sauce
1 tbsp Sugar
1/2 tsp Black pepper
2 tbsp Chopped cilantro
1 tsp Curry powder
Place the marinade ingredients in a food processor and process to a paste. Place the chicken in a sealable plastic bag with the marinade. Turn the bag several times so the chicken is well coated. Refrigerate for 4 hours
or overnight, turning the bag ocassionally to distribute the marinade.
Lift the chicken from the marinade and arrange it on a lightly greased grill over low coals. Cook, turning frequently, until the meat near the bone in not pink, about 45 minutes. Can be cooked under the broiler indoors.

Sweet-Sour Barbecued Ribs
1 small Onion
6 pounds Back Ribs -- Cut in small pieces
4 teaspoons Lemon Juice
2 tablespoons Worcestershire Sauce
1/4 cup Honey
3/4 cup Water
1/2 teaspoon Pepper
1 1/4 cups Ketchup
Mix all ingredients except ribs. Cook for 10 minutes, stirring occasionally. Prepare a charcoal grill, and cook ribs for one hour over medium-hot coals, turning occasionally. Brush ribs with sauce.
Turn and cook for 20 minutes or longer until done
Fat Boy's Bbq Ranch Beef Brisket
Garlic
Salt
Charcoal seasoning
Trim brisket to choice of fat consistency. Rub garlic salt and charcoal seasoning on both sides generously. Cook with indirect heat over charcoal fire and hickory or mesquite chips for smoke flavor.
Slow cook at 350 degrees F for approximately 3 hours. Beef is done at 170 degrees F.
Slice across grain of meat in thin slices. Serve on sandwiches or plates with your favorite sauce.
Bar-B-Q: Smoke-Grilled Salmon
1/4 c lime juice
1 T vegetable oil
1 t dijon mustard
1 pn pepper
4 salmon steaks,1-inch thick-[1-1/2,lb]
1/3 c sesame seed [optl],Toasted
In shallow dish, combine lime rind and juice, oil, mustard and pepper; add fish, turning to coat. Cover and marinate at room temperature for 30 minutes, turning occasionally.
Reserving marinade, remove fish; sprinkle with sesame seed. Place on greased grill directly over medium heat. Add soaked wood chips. Cover
and cook, turning and basting with marinade halfway through, for 16-20 minutes or until fish flakes easily when tested with fork.
Bloody Mary Chicken
with 1 part vodka
Salt
Pepper
Tabasco sauce
Lemon juice
Worcestershire sauce
Garlic powder
Onion powder
Celery seed
Olive oil
Mix tomato juice and vodka. Add salt and pepper. Stir and taste. Add Tabasco sauce, lemon juice and Worcestershire sauce. Stir and taste. Add garlic and onion powder and celery seed. Stir and taste. Add a dribble of olive oil. Stir and pour into a zip-type bag. Add about 4 skinless boneless chicken breasts and marinate overnight or up to 2 days.
After breasts have marinated, put the breasts on the grill or under a broiler, about 5 minutes per side. These come out nicely glazed, very tender and juicy, with a wonderful flavor.
NOTE: You may substitute your favorite Bloody Mary recipe for the marinade ingredients if you prefer.
Carolina BBQ Rub
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper
1/4 cup paprika
Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken, lamb or pork.

Recipe for Couzan Billy Burger
1 beef patty
1 slice red onion, 1/2-inch thick
BBQ Sauce
3 ounces bleu cheese
1/2 teaspoon Worcestershire sauce
6 drops Tabasco sauce
1/2 cup mayonnaise
Salt and pepper to taste
Grill the onion and brush BBQ sauce on each side. Loosely wrap in foil and set aside.
Grill burger to your doneness. Toast the buns.
Combine the remaining ingredients. Place onion slice on bottom bun followed by beef patty. Top patty with generous dollop of bleu cheese mixture.
Top with bun.

Recipe for Coffee Flavored BBQ Sauce
1 cup strong coffee
1 cup Worcestershire
1 cup catsup
1/2 cup vinegar
1/2 cup brown sugar
3 tablespoons chili powder
2 cups chopped onion
6 cloves garlic, crushed
2 teaspoons salt
Simmer for 20 to 25 minutes.

1 1/2 cups milk
2 tablespoons instant coffee crystals
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 small box instant vanilla pudding and pie filling
2 cups frozen nondairy whipped topping, thawed
3 medium, ripe bananas
12 ladyfingers
Additional whipped topping for garnish
1/4 cup semisweet mini chocolate chips, for garnish
Stir together milk and coffee crystals until coffee is almost dissolved.
With hand mixer, beat together cream cheese and sugar in large bowl until smooth and blended. Add pudding mix; gradually beat in coffee mixture until smooth and blended. Gently stir in whipped topping.
To assemble, place one ladyfinger in each 4-ounce custard cup. Top with pudding mixture. Just before serving, place 4 or 5 banana slices atop pudding mixture. Top with whipped cream and garnish with a sprinkling of mini chocolate chips.
