Barbecue Cooking and Tailgating Guidelines
Allow food to come to room temperature before grilling. Generally speaking, this means removing it from the refrigerator 20 to 30 minutes prior to cooking.
Always preheat your grill for approximately 10 minutes prior to grilling. Preheat with the burners on high and the lid down.
As a rule, do not partially cook vegetables before grilling them. Parboiling, steaming, or microwaving produce prior to grilling will result in mushy, inferior texture.
When in doubt, use a meat thermometer. It offers the easiest and most reliable way of determining the doneness of any meat of poultry.

Best Beer Brats Recipe
Ingredients:2 (12 ounce) bottles miller beer
8 bratwursts
1 large sweet onion (sliced)
2 tablespoon butter
Start by grilling the bratwursts on a barbecue grill, just to get some nice grill marks on them.
Next, pour beer into a dutch oven and place on top of the grill. Add butter and the onions.
Then, place your brats into the beer mixture.
Let the beer evaporate and reduce it until it is syrupy and to where it looks like it is coating the bratwurst well.
Serve em up on hot dog buns. Add some mustard or sauerkraut and enjoy!

Secret Recipe for Barbecued Ribs
This secret recipe for barbecued ribs is guaranteed be enjoyed at your next cookout!Barbecued Ribs
Ingredients:
4 sides lean back ribs or spareribs
1 tsp. salt
1/2 tsp. freshly cracked pepper
1 large onion, sliced
1 lime, sliced
1/2 cup strong black coffee
1/2 cup tomato paste
1/2 cup honey
2 Tbsp. brown sugar
2 Tbsp. tequila
1 tsp. Worcestershire sauce
1/4 tsp. Tabasco sauce
Trim excess fat from ribs; sprinkle both sides with salt and pepper.
Place, rib side up, on rack in a covered barbecue grill; cook 60 minutes, turning occasionally. Place onions and lime slices on meaty side of ribs for the last 20 minutes.
To make sauce, combine remaining ingredients; brush ribs generously with sauce and continue cooking for 30 minutes or until ribs are tender. Continue to brush ribs with sauce as they cook.
In case of rain, ribs may be cooked in a 400 degree oven. Following the same directions as above.
Makes 4 to 6 servings

These pulled pork sandwiches are ready for the road. Prepare the pork and assemble the sandwiches at home. Wrapped in foil, they'll stay warm while you travel. Or slice and refrigerate roasted tenderloin, and serve the sandwiches cold. Take along the dressing in a thermos or tightly closed jar, and allow people to dress their sandwiches themselves. Makes 8 sandwiches.
Ingredients
* 1/4 cup hot jalapeño jelly
* 1 teaspoon water
* 1 tablespoon paprika
* 1 1/2 teaspoons salt
* 1 teaspoon granulated sugar
* 1 teaspoon brown sugar
* 1 teaspoon chili powder
* 1 teaspoon ground cumin
* 1/2 teaspoon freshly ground black pepper
* 2 (1-pound) pork tenderloins, trimmed
* Cooking spray
* 1/4 cup ranch dressing
* 1/4 cup sweet hickory smoke tomato-based barbecue sauce (such as Sweet Baby Rays)
* 8 (1 1/2-ounce) hamburger buns or Kaiser rolls
Prepare grill to medium-high heat.
Combine jelly and water; set aside.
Combine paprika and next 6 ingredients (through pepper); rub evenly over pork. Place pork on grill rack coated with cooking spray; cover and grill 15 minutes, turning pork occasionally. Brush pork with jelly mixture. Grill an additional 5 minutes or until thermometer registers 155° (slightly pink).
Place pork on a cutting surface. Lightly cover with foil; let stand 10 minutes. Thinly slice pork. Combine ranch dressing and barbecue sauce. Serve pork and ranch mixture with buns.

Follow this recipe for a T-bone, porterhouse, or sirloin steak that is out of this world!Steak on a Grill
Ingredients:
1/3 cup black or mixed peppercorns
1 tsp. coriander seeds
2 Tbsp. coffee beans
1 tsp. salt
6 2-inch thick T-bone, 4 porterhouse or 3 sirloin steaks
1 1/2 cups red wine
1/4 cup steak sauce
1/4 cup soy sauce
2 cloves garlic, crushed
2 tsp. paprika
Grind pepper, coriander seeds and coffee beans in a spice grinder or pepper mill. Add salt. Press spice mixture onto both sides of steaks, put into large plastic food bags or a glass baking dish.
Combine wine, steak sauce, soy sauce, garlic and paprika; pour over beef. Close bags or cover dish and refrigerate several hours. Turn steak once or twice as it marinates.
Remove meat from marinade, pat dry with paper towels. Reserve marinade.
Cook steaks over medium coals to desired doneness, allowing 7 to 10 minutes per side for rare; 10 to 15 minutes per side for medium. Brush with marinade as they cook.
Let steaks stand a few minutes before slicing. Steaks may be broiled, if desired.
Boil reserved marinade to reduce, adding more wine if desired. Serve with sliced steak.
Makes 12 to 18 servings.

Italian-Seasoned Vegetable Kabobs
Vegetable kabobs seasoned with Italian dressing is a tasty way to serve something that's good for you at your next cook out or tailgating party. It's so easy to grill, here's how:Italian-Seasoned Vegetable Kabobs
Ingredients:
Boiling water
12 fresh large mushrooms
2 small zucchini, cut in 1-inch
bias cut pieces
3 tablespoons Italian salad dressing
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
12 cherry tomatoes
Pour some boiling water over mushrooms in a bowl. Let them stand for 1 minute; drain. On four skewers, alternately, thread mushrooms and zucchini.
Combine Italian salad dressing, lemon juice, Worcestershire sauce, and salt.
Grill kabobs over medium coals about 12 minutes, turning and brushing often with salad dressing mixture.
Thread cherry tomatoes on ends of skewers; grill till heated through, 5 to 8 minutes more, turning and brushing often with salad dressing mixture.
Makes 4 servings.
Another simple way to incorporate healthy vegetables into your cook out is by cooking frozen vegetables along the meat. It's easy. Here's how:
Tear off a 36 x 18-inch piece of heavy-duty foil. Fold in half to make an 18-inch square. Fold up sides, using fist to form pouch. Place one 10-ounce package of frozen vegetables in center of pouch. Season with salt and pepper; top with a pat of butter or margarine. Fold edges of foil to seal pouch securely, leaving space for expansion of steam. Grill over medium-hot coals till vegetables are cooked (allow about 20 minutes for peas and other small vegetables; allow longer for larger vegetables). Turn package frequently.

Barbecued Beef Burgers EverIngredients:
1 beaten eggs
2 tablespoons milk
2 tablespoons ketchup
1/4 cup finely crushed saltine crackers (7 crackers)
1/2 teaspoon salt
1 pound ground beef
4 thin slices onion
4 slices sharp American cheese
1/4 cups chopped onion
1/4 cup butter or margarine
1/4 cup ketchup
2 tablespoons brown sugar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
Combine egg, milk, and 2 tablespoons ketchup; stir in cracker crumbs and 1/2 teaspoon salt. Add ground beef; mix well. Form into four patties; place each on a 12-inch square of heavy-duty foil. Top each patty with 1 slice onion and 1 slice cheese.
Cook chopped onion in butter till tender but not brown. Add 1/4 cup ketchup, brown sugar, horseradish, and 1/2 teaspoon salt; simmer, uncovered, 5 minutes. Spoon over burgers. Wrap foil loosely around meat, sealing edges well. Cook the bundles over medium coals, onion side down, for 15 minutes. Turn burgers over; grill till desired doneness, about 10 minutes more.

How to Grill Corn on the Cob
Grilling Sweet CornThis is the best method to get really great tasting corn on the cob.
Husks on Method:
Peel back the husk without removing it completely from the corn cob.
The remove the thin silk that runs along the kernels of the corn. Remove excess silk with a vegetable brush or by pulling it off by hand.
Fold husk back over the corn cob. Secure husk by tying it in three places (top, center, and bottom) with kitchen twine.
Soak the corn in water for 1 to 3 hours before placing on the grill.
Place prepared corn on the grill directly over medium heat.
Cook 20 to 30 minutes, turning frequently throughout cooking time. Corn is done when it starts to steam.
When done, the husks will be charred but the corn inside the husks will be sweet and tender with a nice roasted flavor. The corn on the cob will taste great plain, but if you like add your favorite herbs, salt, pepper, or butter for added flavor.
Husks On - Alternate Method
1. Using kitchen scissors, trim excess silk from the end of the corn.
2. Soak corn in cold water for a minimum of 1 hour.
3. Before placing on grill, shake to remove excess water.
4. Grill for approximately 25 to 30 minutes, turning frequently.
5. The husk and any remaining silk is removed after grilling. Use heat resistant gloves to protect your hands. If you prefer, add salt and butter to taste.

Pizza Hot Off The Grill
Pizza doesn't have to be take out or come from the oven to be delicious! For an incredibly flavorful pizza crust, and to avoid heating up the kitchen, try making pizza outdoors on the barbecue grill. A wood-burning or charcoal grill will add an extra flavor bonus, but you can use a gas grill and get delicious results. The trick is to keep the pizza rounds small and the toppings on the light side.You may want to grill one pizza at a time until you get the hang of it, since it requires a fair amount of attention. Here are some general guidelines for making a grilled pizza:
Grilled Pizza Tips:
Make sure grill grates are clean.
Precut vegetables, pepperoni, or toppings.
Place toppings, seasonings and cheese and sauce in small dishes.
Create a work space near your grill.
Have all toppings and utensils at hand.
1. Start with about 1 pound of dough for 4 people and divide the dough into 4 portions. Form each portion into a round about 11 inches in diameter and of an even thickness.
2. Brush the bottoms of the dough round lightly with oil. Grill the dough rounds over fairly high heat (or about 4 inches above the coals) for about 1 minute or until the top of the dough puffs slightly and the bottom starts to set.
3. Flip the dough rounds over and brush each top with more oil. Sprinkle on the toppings and monitor the pizzas carefully, rotating them often over the heat so the crust doesn't burn.
