Ingredients
6 chicken drumsticks, preferably free-range
6 chicken wings, preferably free-range
For the marinade:
2 tbsp clear honey
3cm/1¼in piece of fresh ginger, peeled and grated
1 garlic clove, crushed
1½ tsp Chinese five spice
2 tsp soy sauce
3 tbsp orange marmalade
½ tsp grated orange zest
1 tbsp sesame oil

Method
1. Slash the chicken drumsticks three to four times each with a sharp knife and place in a non-metallic bowl with the chicken wings. Mix together all of the marinade ingredients and pour over the chicken. Leave to marinate for at least 2 hours, or overnight if you can, turning occasionally.
2. Once it has marinated, place the chicken on the barbecue over medium-hot coals and cook for about 20 minutes, brushing with any marinade left in the dish as it cooks. If it's colouring too quickly, move to a cooler part of the barbecue to cook more gently. It's important you cook the chicken all the way through.
If you're unsure, pierce a drumstick with a skewer: if the juices are still pink, carry on cooking. Eat as soon as they're cool enough to handle, with the sticky sauce all around your mouth and fingers. Isn't that what barbecues are all about?
3. The chicken can also be cooked in the oven for perfect picnic food. Preheat the oven to 200C/400F/Gas 6.
4. Transfer the chicken into a roasting tray with a couple of spoonfuls of marinade. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until thoroughly sticky and golden, adding extra marinade to the tray if necessary. Once the chicken pieces are cooked, eat them when fresh and hot, or leave to cool before packing up for a picnic or packed lunch.

Seafood Kebabs

Ingredients
16 prepared scallops or queens with their corals
16 raw peeled tiger prawns
450g/1lb monkfish fillet, cut into 2.5cm/1in cubes
3 tbsp olive oil
2 tbsp lemon juice
2 tbsp chopped fresh chervil or parsley
salt and freshly ground black pepper
1 small orange, halved and thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced

8 x 25cm/10in fine metal skewers

Method
1. Mix the oil, lemon juice, chopped chervil or parsley and some salt and pepper together in a large bowl.
2. Add the scallops, prawns and monkfish and mix together well.
3. Cover and leave to marinate at room temperature for 30 minutes or for up to 2 hours in the fridge.
4. Thread the scallops, prawns and monkfish on to the skewers, alternating them with folded slices of orange, lemon and lime.
5. Barbecue the kebabs over medium-hot coals for 8-10 minutes, turning and basting with the left over marinade now and then.

Quesadillas with barbecued vegetables, salsa and guacamole

Ingredients
For the salsa:
8 ripe tomatoes, seeded and diced
1 clove of garlic, peeled and crushed
1 small onion, peeled and finely chopped
¼ fresh green chilli, de-seeded and finely chopped
1 tbsp fresh coriander, finely chopped
For the guacamole:
2 ripe avocados, peeled and stoned
1 lime, juice only
1 clove of garlic, peeled and crushed
1 small onion, peeled and finely chopped
3 small tomatoes, seeded and chopped
¼ fresh green chilli, de-seeded and finely chopped
1 tbsp fresh coriander, finely chopped
For the quesadillas:
1 courgette, cut into four slices lengthways
1 red pepper, seeded and cut into quarters, lengthways
1 yellow pepper, seeded and cut into quarters, lengthways
1 packet flour tortillas
coriander leaves, to garnish
1 lime, cut into four wedges to garnish

Method
1. To make the salsa, mix the tomatoes, garlic, onion, chilli and coriander together and leave for about 30 minutes at room temperature to allow the depth of flavour to develop.
2. To make the guacamole, mash the avocados with the lime juice.
3. Add the garlic, onion, tomato, chilli and coriander and mix thoroughly to combine.
4. To make the quesadillas, place the courgette slices and peppers on the barbecue for about 10-15 minutes to chargrill. Remove the grilled vegetables from the barbecue and cut into strips.
5. Spread 1 tbsp each of guacamole and salsa on the tortilla.
6. Divide the vegetables between four tortillas. Wrap them up and put them back on the barbecue for one minute each side.
7. Open the quesadilla slightly to serve, garnished with coriander leaves and wedge of lime.
