Barb's Favorite Carrot and Raisin Salad

Sometimes a green salad just doesn't go with a meal. Today I made Barb's Cheese and Chard Squares.  I  thought  they needed a carrot and raisin salad to set them off, so I decided to invent one that might be better than most I've tasted. I'm not a pineapple fan, so I decided to go with apples and almonds to add some extra sweetness and texture. It was delicious and my husband raved about the lunch.  The picture shows the combination. Add a crustly loaf of your favorite bread and you've got a delicious meal that will serve four adults.

What You Will Need to Make Carrot and Raisin Salad

Besides the actual ingredients, you will need to have these items: a bowl of at least 2 quarts, a peeler, a grater or food processor, a knife for cutting vegetables, a fork or small wire whisk, a large spoon, and a rubber or plastic spatula.
  • 1 pound carrots, cleaned and peeled
  • 1 large sweet apple (I used a Fuji). (You can use two small ones or even two large or medium ones.)
  • 1 cup raisins
  • 1/2 cup toasted slivered almonds. You can add more if you like.
  • 2 tablespoons plain yogurt
  • 2 tablespoons frozen orange juice concentrate

This includes preparing some ingredients for use.
