Carrot and Raisin Salad Recipe

Barb's Favorite Carrot and Raisin Salad
Sometimes a green salad just doesn't go with a meal. Today I made Barb's Cheese and Chard Squares. I thought they needed a carrot and raisin salad to set them off, so I decided to invent one that might be better than most I've tasted. I'm not a pineapple fan, so I decided to go with apples and almonds to add some extra sweetness and texture. It was delicious and my husband raved about the lunch. The picture shows the combination. Add a crustly loaf of your favorite bread and you've got a delicious meal that will serve four adults.

How to Make Carrot and Raisin Salad
This includes preparing some ingredients for use.
Cut the apple or apples into quarters and cut the core parts from the center of each quarter. Grate the apples and the cleaned carrots. I used a food processor to do the grating and was done in less than five minutes.
