The most common idea of barbecue for most people is to slap some off the shelf sauce all over the meat and then throw it on the grill.

What they end up with is some burned concoction that might resemble barbecue but it sure doesn't taste like barbecue. The flavor just does not reach into the meat.

Barbecue vs Grilling 

Grilling is to take the trusty weber from the garage, start a huge pile of briquet's to glowing and then throw a chunk of meat on the grill. Cook the meat as quickly as possible and perhaps even put some Newman's sauce on it.

Barbecue is slow cooking while letting the flavor soak into the meat. Great Barbecue is a process that allows the greatest smell and flavor to take over your world. It is an art that you develop, not something you just cook for 5 minutes and then flop over for another 5 and call it good enough.

Great Barbecue begins with the fire 

You are not trying to cook a piece of meat, you are creating great barbecue and that begins with the fire. You want to bring the cooking temperature up to the correct point to cook the meat slowly. For most meats this would be from 195 to 250 degrees. Do you have a good thermometer for your barbecue?

Controlling the cooking temperature is paramount to great barbecue. You do not just want the meat cooked fast, you want to slow cook it, allowing all that great barbecue flavor to soak into the meat.

The second step to Great Barbecue 

Barbecue seasoning rub

You want to prepare your meat for Barbecue by coating it with a combination of dry spices. This will vary depending on taste and the type of meat you are going to barbecue. This is just one part of barbecue that I really enjoy ... experimenting with different rubs and seasoning combinations.

Later I will be giving you a few dry rub recipes you can start with.

You will place the meat with the spiced dry rub on the barbecue and let it begin cooking. When its cooked on a low heat for 10 to 20 minutes you will be ready for the next step to fantastic barbecue.

Step 3 to great barbecue is mopping

Opinion: I hear a lot about what type barbecue grill to use or should I use gas or Briquets for my barbecue. Heck, I even hear fights about the secret to great barbecue is in the smoke. Ok, the fight about great barbecue will never end and for that I am thankful ... thats what keep new great tastes and techniques coming. I only want to give my own personal opinion here ...

Great Barbecue is in the Mopping Sauce! this is the secret that adds that fantastic flavor deep into the meat and creates those fantastic juicy cuts. From the beginning to the final 15 minutes you will be mopping this sauce on your barbecue all the time basting the meat with that great barbecue flavor. The basting sauce is not like BBQ Sauce, there is no sugar in it or tomato so it will not burn. You can use the basting sauce with no fear of burning even if you use it over direct heat, so it also works well when grilling things like sausage or burgers.

Step 4 to Great Barbecue is the finishing touch

The finishing sauce is just that ... the finish. This is what most people call BBQ Sauce. It usually has tomoto, mustard and sugar along with other spices and seasoning. The last 10 to 15 minutes is when you use the finishing sauce. Do not leave it on until it begins turning black ... this will only ruin your hard work toward fantastic barbecue. When it starts to darken on the edges of the meat, its ready to serve.

The truth is in the taste 

Well there you have it. Great Barbecue is a four step process. If you follow each of these steps you will turn out mouth watering barbecue that will make you the envy of your neighborhood.

Step 1 ... temperature control
step 2 ... Seasoning Rub
Step 3 ... Great Mopping Sauce, turning meat often
Step 4 ... The finish sauce for about 15 minutes

The Best Barbecue Sauce Recipe

Ingredients

* 4 tablespoons canola oil
* 3/4 cup onion, minced
* 4 cloves garlic, minced
* 30 ounces no salt tomato sauce
* 1 cup no salt catsup
* 4 tablespoons cider vinegar
* 4 tablespoons fresh lemon juice
* 4 tablespoons sweet vermouth
* 1/2 cup brown sugar, packed
* 4 tablespoons chili powder, no salt added
* 1 tablespoon dried parsely
* 2 teaspoons dry mustard powder
* 2 teaspoons paprika
* 1/4 teaspoon freshly ground black pepper
* 2 tablespoons dehydrated green and red bell peppers

Yields: Makes 9 Cups

Preparation Instructions

Grind dehydrated green and red bell peppers in a blender until finely ground.

Add canola oil to a 5 quart Dutch oven and saute onion unti limp. Add garlic and cook 2 minutes. Add remaining ingredients and simmer on low 20-30 minutes until onion is tender and sauce has thickened.

Store in jars in the refrigerator, freeze or can.

Barbecue Sauce as a Marinade or Mopping Sauce 

Earlier I said that you should only use your barbecue sauce as the final step for fantastic barbecue. Because of the tomato sauce and the sugar, your barbecue sauce will burn if you put it on the food for more than the last few minutes. Now I am going to give you a quick tip for making marinade or mopping sauce using your favorite barbecue sauce, add two cans of beer for each cup of barbecue sauce. You can now use this to marinade your foods before grilling or as a mopping sauce during grilling.

Note: you can also use this sauce on any meats you are going to be cooking in the oven and folks will think you spent the day outside with your barbecue.

Pork BBQ Dry Rub

Barbecue Dry Rub Recipe for Pork by the BBQ Pit Boys

This is a classic Dry Rub recipe for pork ribs, butts, loins, and chops. Start with this recipe and then adjust the ingredients, spices, and quantities to make it your own special barbeque rub. Mix together 1/4 cup Paprika, 1/8 cup Fresh Ground Black Pepper, 1-2 tablespoons Garlic Powder, 1-2 tablespoons Onion Powder, 1 tablespoon or more Cayenne Pepper, 1/4 cup Coarse Salt. 1/4 cup Brown or White Sugar. Adjust quantities or add additional ingredients to make this your own secret barbecue dry rub recipe. Will lightly coat up to 6 lbs. Pork Ribs and 10 lbs.
