Bring on the Beetroot
Beetroot is a delicious vegetable equally at home in comforting soups as it is in light salads or pickles. It's also a good source of iron, antioxidants and magnesium. It's low in fat and calories and high in fibre making it a great choice for people watching their weight. It's not surprising then that the humble beetroot is undergoing something of a revival as a superfood. If you've only every tried it pickled in vinegar from a jar, then you're missing out on a rich, earthy and satisfying vegetable.

Vegetarian Borshct
1 Large onion fineley chopped
4 Garlic cloves crushed
4 sticks celery finely chopped
12 oz cabbage finely chopped
two medium fresh beetroot chopped
two large carrots finely chopped
8oz mushrooms finely chopped
1 tin of kidney beans drained and rinsed
1 tin chopped tomatoes
600ml of vegetable stock
2 tbsps tomato puree.
juice of 1/2 a lemon
2 bay leaves
salt and pepper to taste
Fry the onion, bay leaves and garlic in oil over a medium heat for about 3-4 minutes. Reduce the heat and add the cabbage, celery, beetroot, carrot and mushrooms at 5 miutes intervals. Continue to fry gently for another 10-15 minutes.
Then add the tomatoes, stock, beans and tomatoes puree and simmer for another 15 minutes or so. Add the lemon juice just prior to serving.

2 apples cored and chopped.
1. Add all of the above to a juicer or blender. Whizz pour and serve over ice.

2oz pine nuts lightly toasted
1tbsp extra virgin olive oil
Juice and zest 1 unwaxed orange
2 tbsp chopped fresh parsley
Salt and pepper
