Beet is rich in a substance called betaine which is shown in clinical studies to reduce the chemical signs of inflammation (for example, C-reactive protein, interleukin-6 and tumor necrosis factor alpha). These chemical markers of inflammation are suspected to be responsible for health problems such as type-2 diabetes, heart disease, dementia, Alzheimer's disease and osteoporosis.

~ Side Effects ~

Beet juice side effects..are you aware of it?

Shoud you be worried about the side effects of drinking beetroot juice?

Beet juice side effects can depend on how often you drink but as far as my research has taken me the side effects of beetroot is mild and uncommon. One of the side effects that can occur if you drink beet juice too regularly is the change in the color of your urine or pee or stool (poop). The term for this side effect is called beeturia. This beet juice side effect although strange it is totally harmless and can be alarming to the unsuspecting observer if he or she is are unaware of what is happening to you and why or how.

Another one of the side effects of the beet juice has the potential to be slightly dangerous to persons suffering from gall bladder or kidney issues. High oxylate consumption has been known to increase your body's tendency to crystalllize minerals. Beet greens and, to a lesser degree, beet roots, do contain oxylates so kidney and gall bladder sufferers you need to keep an eye out! if you are know to have a medical history of forming oxylate based kidney stones, you may want find it helpful to remember this.Do take into consideration.

During my research I also came across some side effects that are uncommonly caused by beet juice. One of them claims that drinking the beetroot juice by itself can temporarily paralyze vocal chords. i know this may be a concern to some people so i though this might be helpful to share. Another uncommon side effect from drinking beet juice includes chills, hives and a high fever. These aren't common, or alt least they appear that way.

i interesting enough it is also said that eating large quantities of beet or if you drink a great amount of beet juice it may cause low calcium in the blood (hypocalcemia). As far as i understand this is only in theory and most studies do not show that it would reduce calcium absorption enough to be of any great significance.

For maximum results decrease beet juice side effects by drinking with another vegetable juice like apple or carrot juice.

As always, do some research. It's always a good idea to be well informed about health.

If the thought of these side effects concerns you consider adding beet juice to your diet slowly. Start with a quarter of an ounce a day and work up to no more than one to two ounces a day. By paying attention to your body, you can see if beet juice is effective for you.

All in all, beets and beet juice have been known to have a very safe history. People from all around the world have eaten beetroots for generations and without any major problems. it is important to pay particular attention to your body and eat whole foods that make you feel good; physically, mentally, and emotionally.

The numerous health benefits of beetroot juice far outweigh the very small minority of people who have encountered negative side effects from drinking beets. Go ahead and confirm it for yourself. You be the judge as to whether beet juice and beets are right vegetable food for you.

Growing beetroot..tips on how to grow your own beet vegetable.

Beets can be relatively easy to grow..

Before you can grow your own beetroot you need to prepare the soil
Till the soil where you intend to grow your beet in autumn prior to sowing but hold back on the addition of manure. Reason being you want the roots to grow and develop correctly without any deformities. Pay particular attention when you are digging the or tilling over the soil ensuring that the presence of any stones be removed as these can restrict your root of beet when they start to grow. And take note also of the acidity of the soil, if you discover it is too acidic then add more lime, then increase the appropriate amount of lime so that conditions are suitable for your beetroot to grow in.

The next step is sowing your beets seeds
It would be wise to grow or rather sow your beetroot after the last frost. If need be, sowing can be brought forward a few weeks if you use a poly tunnel or cloche. You will need to soak your beetroot seeds for a few hours before sowing it. Each seed cluster actually contains one to four seeds. You can sow the seeds in seedling pots and then transplant the seedlings into the final growing position but some find higher success rates if sown directly into the soil.

If sowing in rows then leave around 30cm between rows. Sow the seeds at around 1 inch depth and cover with soil. Sow seed clusters around 5cm apart.

After sowing make sure the soil remains damp until the seeds have germinated and you can see the emerging seedlings.

Beetroot can also be grown in containers. Fill a pot 30cm in diameter with potting compost and sow about 6 seed clusters at 2.5cm depth. Thin the seed cluster seedlings as described above.

Positioning in the soil
Beetroot will grow in part shade or full sun just make sure the soil doesn't dry out if you opt to grow your beets in the full sun.

The Soil type

Beets tend to like a non acidic soil - around PH 6.5-7.0. Your beetroot will grow well in a medium to light soil, if the soil is heavy digging it uyp and turn over with a fork to loosen it up a bit
When your beetroot seedlings emerge there may be more than one from each seed cluster. weed out all but the strongest seedling from each seed cluster.

After the seedlings have reached about 5cm in height you can thin them to their final positions - about 10cm for the Globe varieties and about 15cm for the long varieties.

Do not let the soil dry out as this can reduce the growth rate and the roots can become woody and less succulent.

Harvesting

Globe beetroots are at their most tender and greatest flavor when they are grow to around 3cm in diameter. When harvesting the beetroot it makes sense to harvest equally from each row so that more space is left between beets that remain in the ground. This will help their development.

When the size of globe varieties reaches about 7.5 cm in diameter they should be harvested as any further growth will make them less palatable. Gently dig under the root with a trowel and lift the bulb out of the soil taking care not to damage the outer skin. The less the bulb is damaged the longer the beetroot can be stored for.

Harvested beetroots are absolutely delicious when pickled (see beet pickle recipe below guest book) but can also be stored in a dry cool environment such as a wooden box filled with sand.

Not many people have discovered that the beetroot leaves are also edible and can be prepared and cooked in similar ways to spinach. The leaves of the beetroot should be eaten fresh.
Varieties

The two variety beet types

There are two main type of Beetroot varieties - Round (or globe) beetroots and long beetroots. Globe varieties are characterized by their spherical shaped roots whereas the long varieties are similar in shape to parsnips. Long varieties beetroots can reach up to about 10 inches in length and they tend to take longer to develop than the globe beet varieties.

A popular variety is Bolthardy which is resistant to bolting so is often used as an early sowing variety. Globe varieties can come in a number of colurs - red (e.g. Bolthardy), golden (e.g. Burpees Golden) and deep red (e.g. Red Ace)

~ Cooking with beets and beetroot ~

Here are some top tips for cooking with beet or beetroot

Beets are naturally a sweet and nutritious vegetable whose leaves are quite edible and contain some nutrients too. The following are some tips on how you can get the most out of your beetroot when cooking.
  1. beetroots has a really thin skin so you need to be careful when washing the beet as you will want the skin to remain unbruised and in tact.
  2. although beets and beetroots can be eaten raw, generally one of the best ways to eat them is by cooking. Beetroots can be boiled or baked or steamed or fried and beets can also be grilled. Prepare them any way you want and if you must eat your beetroot raw try juicing them for easier digestion.
  3. for an even cooking you can either choose or buy beets of an even size. Or you can cut your beetroot up in equal or close as possible sized amounts for cooking.
  4. cooking beets with the skin on will give you a higher nutrient intake and helps to retain the color in your beetroot.Once your beet is cooked the skin should come off by rubbing whilst the vegetable is under cold water.
  5. When preparing for cooking, trim your beet leaving at least an inch of the leaf stems attached and do not remove the root of the vegetable. You can always remove the stem of the beetroot and the root after cooking.
  6. if you find it necessary to peel your beetroot before cooking, use a swivel vegetable peeler for maximum results. This works better than a peering knife.
  7. To avoid staining wrap your beetroots in foil paper.
  8. To get the best flavor from your beets cooking using the baking method rather than the steaming or boiling method will definitely help you get the most out of your beetroot.
  9. Have you planned how many beets you are going to serve after cooking? three or four small beetroot should do the trick for each individual.
  10. One eight ounce can of sliced beets is equivalent to about one cup of beets
  11. Herbs and spices can be added to your beets when cooking. These tend to go well: allspice, cloves, chives, dill weed, garlic, mustard seed, thyme, bay leaf and citrus.
  12. Words of wisdom: Wearing rubber cloves during the cooking and preparation of beets or beetroot will help keep those fingers from staining.
  13. if your fingers do happen to get stained with beet juice you can remove the stains with wet salt and lemon juice and then wash with soap and water.
  14. if your cutting boards and plastic containers pick up beet stains try using bleach solution like clorax or other to remove the red beetroot juice stains
  15. Grated raw beats make a tasty compliment for salads..who cares if they come in purple or red right?
  16. cooking and serving beets with other foods can be a task if you are trying to avoid the bleeding of this vegetable into your other ingredients. For best results if possible add the beet just before serving to the other non beetroot foods.
  17. Do not add salt to the water when cooking beets, as beetroots are naturally high in their sodium content.
  18. To revive sweetness and color in older beets, add a pinch of sugar and a pinch of salt to the water.
  19. To microwave whole beetroots, pierce the skin and place one pound in a micro-proof dish with 2 Tablespoons of water. Cook your beet on high for 9 to 12 minutes. Leave to rest for 5 minutes before cooling and peeling the vegetable
  20. One Tablespoon of vinegar added to your beetroot cooking water will not only reduce the odor of the cooking beets, but also help your beet to maintain their bright red or purple color.
