What is a beignet? In the simpliest of terms, beignet - pronounced "ben-yay" - is French for fritter and is an umbrella term for pastries made from deep-fried dough.
While they are often stuffed with fruit, vegetable, seafood or meat fillings, beignets are best known in the United States as a doughnut-like confection that is served hot and covered with powdered sugar. They are often paired with cafe au lait- a 50/50 mix of milk and bold coffee with chicory and are the official state doughnut of Louisiana.

On my only visit to New Orleans, I racked up quite a bill and had to buy an extra suitcase to lug back the cans of coffee and boxes of Beignet mix. It was worth it, but just not the same as sliding through an inch of icing sugar to get to your table :)

It has been years since we visited New Orleans and had a genuine beignet. I can't remember the name of the place but it was well known for having the best about 30 yrs ago.

I've never had a bad beignet, but I favor Cafe Beignet's offering. I think it's the texture and heaviness of them that I like best. That said, I don't think I've ever said, "no" to a beignet from Cafe du Monde, either.
