Hello! I am Asfora from Bento Box Blog and I'd like to share my cupcakes with you! I use an adapted Be-Ro Madeira cake recipe to make my cupcakes (I don't use lemon essence or peel). Here it is and you can get lots of other Baking recipes from be-ro.com.
150 g (5 oz) butter or margarine
150 g (5 oz) caster sugar
3 medium eggs, lightly whisked
225 g (8 oz) Self Raising Flour (or Plain flour with a couple of teaspoons baking powder)
1 Heat oven to 180ºC, 350ºF, Gas Mark 4. Place muffin / bun / cupcake cases in the muffin tray
2 Cream fat and sugar, beat in lightly whisked eggs with a little flour.
3 Fold in the remaining flour.
4 Bake for about 15 mins.

It's supposed to be so you waste less mixture in the mixing bowl and get more into the cupcake cases. In reality it means licking the bowl out suddenly got a whole lot more efficient!
