Since I am on several different medications, I have to be really careful of the herbal supplements I take because some of them interact with my prescriptions, Valerian being one of them. Valerian is a fantastic alternative to help you relax, calm your nerves and aids in helping you to sleep. Since I have a sleeping disorder, I needed something to take and DID NOT want another prescription for sleeping pills, so I started using the honey.
Come to find out, honey has been used for thousands of years as a sleep aid. Usually you would heat some milk and add some honey to it (which sounds wonderful but unfortunately I cannot drink milk). There are many different ways to use honey before you go to bed, but I just take a teaspoon every night right out of the jar.

Pharmacist-Mike McInnes and Nutritional expert Stuart McInnes are a father and son team who researched for years and conceived the Hibernation Diet. Although, there is not a lot of scientific proof that honey will help you to lose weight, it is a proven fact that honey is very medicinal. This is not the first time I have heard that honey helps to lose weight, but I personally found it was interesting about how the honey and fructose fuels the liver.

What is Acacia?
Acacia is a genus of shrubs and trees belonging to the subfamily Mimosoidease It is a plant that can be found all over the world and is known by different names. It is said that Acacia is mentioned in the Bible and the arc of the covenant was made out of the wood. There are over 1000 species of the Acacia plant and it is known by different names. In Australia the acacia flower is their National Flower and is known as Wattle. Actually September 1st is known as "Wattle Day".The flowers on the Acacia plant are very unique. They are clustered together creating one flower on the very tip of the branch and have a fuzzy appearance. The bloom's are white to a light yellow but as it matures turns a beautiful golden yellow. With the scent being so beautiful, different parts of the world uses the flowers in perfumes.
Interesting Facts about the Acacia Plant:
-The flowers do not produce any nectar, the leaf and phyllode glands secrete a nectar of sugary substance which attracts ants, bees and butterflies.
-The color of the Acacia flower in each species is fairly consistent which aids in helping to identifying different species.
-Acacias are mainly pollinated by insects
-All parts of the Acacia plants are utilized. The Aborigines of Australia traditionally harvest the seeds and use it as food. The seeds are ground into flour and eaten as a paste or baked into a cake. They contain 25% more protein than rice or wheat and because of their hard seed coats can store well for long periods of time.
-The Acacia plant also makes a great source of firewood and timber for furniture and charcoal in Southeast Asia (the charcoal does not smoke)
-The pulp of the Acacia is used for making paper

Honey Cashew Coffee Cake
Ingredients
- 1 1/4 cup of Flour
- 3/4 cup Wheat Flour
- 2 teaspoons of baking powder
- 1/4 cup of powdered milk
- 2 eggs whites (beaten)
- 3/4 cup of low fat milk
- 1/4 cup of canola oil
- 1/2 cup of Acacia Honey (or whatever kind you have on hand)
- 1 teaspoon of good vanilla
- For the Topping
- 3/4 cup of chopped cashew nuts
- 1/3 cup of Acacia Honey (or whatever you have)
- 1 Tablespoon melted butter
- 1 1/2 or 2 teaspoons of cinnamon (depending on how much like cinnamon)
Instructions
For the Cake:
Mix all of the dry ingredients together and set aside. Mix all of the wet ingredients and slowly add the dry ingredients in small batches. Pour into a well greased Bundt Cake Pan. Next mix together the topping ingredients and drizzle over the top of the cake batter-as the cake cooks the toppings will sink into the cake.
Bake at 350 degrees for 35 minutes

I will tell you, I am 100% addicted to this honey. Since I have been taking it every night before bedtime, I have seen nothing but great results. As with most honey it is a delicacy that is enjoyed and loved by many people around the world. It taste as beautiful and it looks. It has a mild taste that offers hints of flower and is very light. To me it has a mixture of a vanilla and floral taste. I especially love the Acacia that comes from Italy (I will provide you with a link shortly).
