Baking Your Own Baked Cheesecake
I just love cheesecake, it would have to be my favourite dessert of all time.
Here I have put together some of my favourite baked cheesecake recipes, some are so quick and easy, others may take a little longer to prepare.
Serve any of these great recipes with cream, ice cream or just enjoy the beautiful flavours and textures of the cheesecake on it's own.
Try out different bases on plain cheesecakes, you can use different biscuits such as: granita, chocolate, oreo and I have a friend who uses corn flakes, the best. Try using melted chocolate swirled through a plain mix, caramel or raspberry topping, pecan nuts, coffee and you could reduce the sugar and use honey instead for the filling.
If you have been to scared to try a baked cheesecake, don't be. They are really easy once you have made them a few times. Mostly the principle is the same for most, just a few tweeks here and there.

Best Cupcakes Ever
You definitely have to try these.
Quick and easy. Leave out the mango and kids will love them, so will dad.
Cheesecake Cupcakes
- Serves: 12
- Prep Time: 15
- Total Time: 1 hour
Ingredients
- 1 cup Sugar
- 5 Eggs
- 1 tsp Vanilla Essence
- 350g Cream Cheese
- 1/3 cup Mango Juice
- TOPPING
- 3/4 cup Sugar
- 250ml Sour Cream
- 1 tsp Vanilla Essence
- Whipped Cream
- 1 small tin Mangoes (drain juice and set aside). Mangoes for topping
Instructions
Take cream cheese out of fridge and let sit for about an hour or until soft.
Beat cheese with electric mixer until smooth in texture.
Add sugar in small quantities while beating, make sure sugar has dissolved and mixture is smooth.
Add one egg at a time, beating between each addition and make sure mixture is smooth.
Place vanilla essence and mango juice into mixture, mix well.
Pour mixture evenly into about 12 patty pans. Only fill about 2/3 of the way up.
Place in a warm oven at about 165 degrees C or 329 degrees F. Bake for about 30 minutes or until firm when tapped on top.
Remove from oven and let sit for about 5 minutes.
Topping
Whisk sour cream and sugar together until creamy and sugar has dissolved.
Add 1 tsp vanilla essence and mix.
Pour topping over top of cheesecake cupcakes.
Place back into oven and bake for about 5 minutes or until set.
Remove from oven and let cool in trays.
Place in fridge until cold.
Serve with whipped cream and little pieces of mango on top.

Classic Lemon Cheesecake Recipe
- Serves: 10
- Prep Time: 30mins
- Total Time: 65mins
This would have to be my favourite of all cheesecakes.
Plain, but oohh so delicious.
The hardest part of a cheesecake is the base, crushing biscuits by hand takes time but can be done.
This is when a food processor becomes your best friend. If you don't have one, do yourself a favour and get one, you will not regret it.
Ingredients
- BISCUIT BASE
- 2 cups (160g) Crushed Sweet Plain Biscuits
- 1/4 cup Cream
- 75g Butter
- melted
- LEMON FILLING
- 750g Cream Cheese
- at room temperature
- 150g Caster Sugar
- 2 eggs
- Rind of 1 Lemon
- grated
- 1 tblsp Lemon Juice
- TOPPING
- 360g Sour Cream
- 2 tblsp Sugar
- 1/2 tsp Vanilla Essence
- 1/2 tsp Nutmeg
Instructions
Set Oven at 175 degrees C/347 degrees F
Line base of a 24 cm springform pan with baking paper, lightly grease bottom and sides of pan.
BASE
Crush biscuits by hand or with a food processor to fine crumbs.
Place biscuits, cream and melted butter in bowl and mix until combined.
Press out with fingers and a glass so the base is about 5cm up the sides of pan. Spread evenly until whole base and sides of pan are covered. Place in fridge until set.
LEMON FILLING
Cream cheese should be at room temperature. Beat until smooth, add caster sugar gradually,beat well between each additiion. Mixture should be of a smooth consistence.
Beat eggs together in separate bowl, add to cheese mixture slowly while still beating. Mix in lemon juice and rind.
Spread cheese mixture over base evenly with a spatula. Bake in oven for about 30 minutes. When baked cheesecake is ready remove from oven and let cool to room temperature.
TOPPING
Whisk together sour cream, sugar and vanilla essence until sugar has almost dissolved. Pour mixture over baked lemon cheesecake evenly. Place in hot oven (200 degrees C/392 F) and bake for approximately 5 minutes or until set on top.
Remove from oven and cool, refrigerate overnight/8 hours. Sprinkle lightly with nutmeg.
Slice and serve with dollop of rich cream.
I have also made this with melted chocolate swirled over top instead of nutmeg.

CHOCOLATE ICING
Mix 200g block good quality chocolate & 1/4 cup cream.
Suspend bowl over hot water, do not touch water.
Gently stir until smooth consistence.
Let cool in fridge for about 10 minutes.
Lemon Meringue Pie With Condensed Milk
CRUMB CRUST
1 Cup Plain Sweet Biscuits, (Crushed)
1/2 Cup Melted Butter
FILLING
250g Cream Cheese
14 oz Can Sweetened Condensed Milk
2 Eggs, separated
Rind of one Lemon, grated
1/4 Cup Lemon Juice
1/2 Cup Castor Sugar
INSTRUCTIONS
CRUMB CRUST
Crush biscuits to very fine with food processor or by hand, add melted butter, mix well.
Press into a 20cm baking dish about 3/4 up the sides.
FILLING
Cream cheese should be at room temperature. Beat until smooth, add condensed milk, lemon rind and juice. Gradually add egg yolks and continue beating. Pour mixture into prepared bakeware, set aside.
MERINGUE
Whip egg whites until soft, add in the sugar very slowly in batches. Should be stiff between each addition. Keep mixing until all sugar has disolved and when you pull out the beaters, stiff peaks form. Spoon meringue all over top of filling and spread evenly. Pull up little peaks for presentation.
Bake in hot oven for about 10 minutes to brown the meringue.
Place in fridge to set for 6 hours and remove from tin when set.
Serve with custard or ice cream. Delicious.

- My husband loves cheesecake. Strangely enough, I'm not a fan. A good slab of chocolate cake is the thing for me :) When I am trying to watch my weight, I'll usually buy him a cheesecake because I'm not tempted. I may just have to try one of your recipes. Thank you and blessed!
