I've had this recipe for almost 20 years now and everytime I bring this blueberry coffee cake to a potluck, it's an instant hit. According to a lot of taste testers, this dessert is "to die for". This is the fully "leaded" version and is not one of my sugar-free or low calorie recipes. Sorry, Splenda fans, but there is nothing better than the real thing this time. Trust me, it will be so worth it once you have a bite of this coffee cake.

What You Will Need

For the cake:

1/2 stick margarine or butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
1 1/2 cups fresh or frozen blueberries

For the streusel topping: (This is the best part!)

1/2 cup flour
1/2 stick margarine or butter
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

What To Do Next

Preheat oven to 350 degrees. Grease and flour 8 inch baking pan.

To make the coffee cake:
Combine butter and sugar in mixing bowl and beat until thoroughly blended.
Add egg and vanilla and mix well.
Mix flour, salt, baking powder until throroughly combined.
Add the dry ingredients to the butter and sugar mixture along with the milk, and beat until batter is smooth.
Spread in prepared pan and sprinkle blueberries evenly on top of the batter.

To make the streusel topping:
Combine flour, sugar, butter or margarine, cinnamon and nutmeg with a pastry blender or two knives until mixture is dry and crumbly.
Spread mixture over the blueberries.

Bake 50 to 60 minutes or until toothpick comes out clean. Do not overbake as the cake will be tough.

Serve warm and enjoy!
