Beef Burger With Lime & Red Onion Relish
Prepare 20 mins| Cook 15 mins | Serves 4
- 2 tbsps oliver oi
- 1 onion, chopped finely
- 2 clovers garlic, crushed
- 500g minced beef
- 1/4 cup chopped parsley
- 8 slices ciabatta bread, toasted
- 1/2 cup prepared hummus
- 50g baby spinach leaves
- Fries to serve
Lime & Red Onion Relish
- 30g butter, chopped
- 2 red onions, sliced thinly
- 2 tbsps brown sugar
- Grated rind and juice of 1 lime
- 1 long red chili, seeded and chopped finely
How To Prepare:
1. Heat half the oil in a large frying pan over high fire.Stir fry Onion and garlic for 3-4 mins or until tender. Transfer to large bowl. Allow to cool.
2. To prepare relish, melt butter in same pan over high fire. stir fry onion for 4-5 mins or until tender.Blend in sugar, rind, juice and chili. Cook over medium fire for 8-10 mins or until the onion has caramelized and turned brown. Set aside.
3. Add beef and parsley to onion and garlic mixture. Season to taste. Shape mixture into 4 even sized and flat patties.
4. Heat remaining oil in a large frying pan over medium fire. Pan fry patties for 4-5 mins each side or until brown and cooked through.
5. Spread 4 slices of toast with hummus. Top each with a patty, spinach leaves and onion relish. Cover with remaining toast slices. Serve with fries.
