Best Chocolate Cake Recipe

• Butter (unsalted) 95 g
  
• Sugar (granulated) 110 g
  
• Egg yolk 90 g
  
• Egg white 140 g
  
• Sugar (for egg white) 50 g
  
• Cake flour 80 g
  
• Cacao powder 15 g
  

Before preparing the dough for the chocolate sponge cake, you make the ganache from a mixture of couverture chocolate, heavy cream, glucose, and butter.
