1. Thaw your meat completely before placing it in the slow cooker.
2. Be careful where you place your crockpot. Keep it away from walls, other appliances, and cabinets. Don't set plastic or paper bags against or near it. Crockpots get hot!
3. Remove your food promptly and place it in the proper storage containers for freezing or refrigerating.
4. Clean your crockpot thoroughly after each use and don't allow any food buildup on the insert.
5. Throw away your dish if your power should go out and you don't know how long your crockpot's power was off. Be safe, and don't take chances with food contamination.

Serves 6-8.
Ingredients:

* 2 lbs. ground beef
* 1 cup chopped onion
* 1 chopped green pepper
* 1 large (28 oz.) can crushed tomatoes
* 1 (8 oz.) can tomato sauce
* 2 cans kidney or pinto beans (or one each), drained
* 1 tsp. black pepper
* 3 tsp. chili powder
* cayenne pepper, to taste
* 1 tsp. garlic salt

PREPARATION:
Brown the ground beef in a skillet. Drain well. Add all the ingredients into a crockpot and mix well. Cover the crockpot. Cook on low setting for 7 to 8 hours.

Tips: Served topped with cheddar cheese and/or a dollop of sour cream.

Crockpot Chicken and Dumplings 

A Winter Favorite!

Serves Approx. 8

INGREDIENTS

* 4 skinless, boneless chicken breasts
* 2 tablespoons butter
* 2 cans condensed cream of chicken soup
* 1 onion, diced
* 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Put the chicken, butter, soup, and onion into the crockpot. Add water to cover the chicken. Cover the crockpot and cook on high for 5-6 hours. Before serving (about 1/2 hour before), tear the biscuit dough into pieces and place in the crockpot over the chicken. Cover and continue to cook until the dumplings are cooked through.

1. Don't touch that lid! Your dishes will cook more quickly if you keep the lid in place, and don't lift it more than you need to. Lifting the lid causes the slow cooker to lose heat.
2. Pay attention to the size of the crockpot recommended in your best crockpot recipes. If you don't have the proper size, adjust the recipe's cooking time accordingly.
3. Check your cooking times the first time you make a recipe. Peek at how done the recipe is during the last couple hours of cooking. Then note your ideal cooking time on the recipe. Most recipes give a range, such as, 6-8 hours in the crockpot.

Ingredients:
2 cups of steel-cut oats (Irish oatmeal)
8 cups of water
2/3 cup of raisins
1/4 tsp salt

Add all ingredients to the crockpot and mix. Cook on low setting for 7-8 hours.

Note: Don't substitute rolled oats for the steel-cut oats. They won't hold up well in the slow cooker.
