Delicious Gluten Free Food!

I've been gluten free for almost 2 years now--like many people after years of being sick and trying medication after medication, I started eliminating foods from my diet and discovered that gluten was the root of all my problems.

Looking back on it, figuring out gluten was my problem was the easy part, the hard part has been finding great tasting gluten free food.

One of the best resources that I've found for gluten free eating is Amazon.com. Amazon's subscribe and save program, as well as the ability to buy in bulk, makes gluten free eating much more affordable. In this lens, I'm focusing on foods that I missed a lot and through a lot of trial and error found some great replacements.

One of the things that I missed the most going gluten free was home-made pizza. I tried recipe after recipe, mix after mix, but didn't strike gold until I tried Gluten Free Mama's Pizza. It tastes like the real thing--in fact my kids didn't notice a difference when I switched over to the gluten free crust.

I love this mix because I can cook it on my pizza stone with cornmeal on the bottom and I get to enjoy yummy pizza without gluten.

In order to get the dough onto a pizza stone, I roll it out onto a greased cookie sheet (the dough will be really soft, kind of like biscuit dough) and then flip the cookie sheet over onto a cornmeal sprinkled pizza stone. The crust will just peel off the cookie sheet if you've greased it well.

This pasta is a total winner. Again, it is really hard to tell whether you are eating gluten free or regular pasta. It is easily the best one that we've tried, hands down. Tinkyada makes brown rice pasta (much better than the white rice) in various shapes and sizes, but the spaghetti is my favorite.

After it's done cooking, I always rinse it in cold water. It really helps take out the stickiness of the rice pasta and helps it to look and taste just like regular pasta--which was super important since I am serving it to a bunch of picky kids!

Gluten free eating isn't always the easiest thing to do on the go, but these bars make that possible. They are so yummy--filled with great tasting fruit--and the cookie part is perfectly balanced with the fruit so you don't get too much of either component.

I've served these to gluten eating friends who have actually said they taste better than regular pancakes. The key is that they taste just enough like gluten filled pancakes, but slightly better. And the smell that fills the kitchen while they are cooking is heavenly. Make extra and toss them in the fridge--they reheat great in the microwave--and you can have pancakes any time you want.

My secret? Add a splash of vanilla to the batter.

Get Creative!

Good gluten free bread is hard to find, so try using two waffles around your favorite sandwich fillings. I find this to be especially tasty with warm sandwiches or peanut butter and jelly!

Seriously, these are so good, you won't know the difference.

My whole family loved these, and Betty Crocker has a yummy recipe for dessert bars where you alternate spoonfuls of brownie and cookie mix. The resulting dessert will make you forget that you are eating gluten free.
