Recipes for Italian desserts - My easy family recipe

- Serves: 8
- Prep Time: 5 minutes
- Total Time: 20 minutes
Ingredients
- Strong brewed coffee (3/4 cup)
- Softened cream cheese (1 - 8oz. package)
- Sugar (1 cup)
- Chocolate syrup (1/2 cup)
- Cool whip (1 cup)
- Frozen or unfrozen pound cake (1 - 10 3/4 oz. package)
- Crushed Heath bars (2 - 1.4 oz. bars)
Instructions
Cut pound cake into 8 slices. Arrange in an un-greased 11 x 7 x 2 inch dish, cutting to fit. Drizzle with the coffee. In a small mixing bowl beat the cream cheese and sugar until smooth. Then add the chocolate syrup and fold in the Cool Whip. Spread this mixture over the cake. Sprinkle with crushed Heath candy bars. Refrigerate until serving.

- Total Time: 3 hours and 50 minutes
Ingredients
- Cheesecake: Softened cream cheese (1 - 12 oz.)
- Sugar (1/2 cup)
- Vanilla (1/2 tsp.)
- Eggs (2)
- Fresh raspberries (1/2 cup)
- Chocolate pie crust (1 - I refer Keebler)
- Sauce: Butter (1 tsp.)
- Unsweetened chocolate (1 oz.)
- Powdered sugar (1/4 cup)
- Corn syrup (1 tsp.)
- Water (2 tsp.)
Instructions
Preheat oven to 325 degrees. Beat cream cheese until fluffy. Gradually add sugar and vanilla. Add eggs one at a time, beating well after each. Fold in raspberries. Fill crust and bake on baking sheet 35 minutes. Cool and chill.
In a sauce pan, heat on low until chocolate is melted. Remove and add vanilla. Cool a little and put on top of cheesecake. Chill for 3 hours.

Classic Cannoli Recipe

- Serves: 8-10
- Prep Time: 60 minutes
- Total Time: 6 hours
Ingredients
- Shells: Flour (6 cups)
- Sugar (1 cup)
- Salt (1 pinch)
- Crisco (1 cup)
- Beer ( 1 can - 12 oz.)
- Cream Filling: Milk (1 qt.)
- Pet milk (1 can)
- Sugar (2 cups)
- Cornstarch (1 cup)
- Cinnamon (1 stick)
- Vanilla extract (2 tsp.)
- Cool Whip (1 cup)
- Ricotta Filling: Ricotta cheese (3 cups)
- Sugar (1 1/2 cups)
- Vanilla extract (2 tsp.)
- Finely chopped citron (1/2 cup)
- Finely chopped chocolate (1/2 cup)
- Topping: Finely chopped nuts or chocolate sprinkles (as needed)
Instructions
Set out 5 inch aluminum tubes about 3/4 inch diameter.
Shells: Sift together in a bowl the flour, sugar, and salt. Cut Crisco in with pastry blender until pieces are the size of small peas. Add the beer. Turn dough onto a lightly floured surface and kneed until smooth. Set out deep sauce pan or automatic deep-fryer and heat oil to 360 degrees. I use Crisco oil. From cardboard, cut a square pattern 4 inches x 4 inches. Then roll dough 1/8 inch thick on lightly floured surface. With cardboard pattern, cut squared from dough. Wrap dough loosely around tubes just lapping opposite edges. Seal edges with lightly beaten egg whites. Press edges together to seal. Fry as many cannoli shells as will float un-crowded one layer deep in the oil. Fry until golden brown. Drain off fat before removing to absorbent paper. Cool slightly and remove tubes. Then cool completely before adding cream filling.
Cream Filling: Put milk, Pet milk, sugar, cornstarch, and cinnamon into a sauce pan and cook at medium heat until thick. Refrigerate overnight. The next day remove cinnamon stick from mixture. Beat cream with electric mixer until creamy. Add vanilla and Cool Whip. Do not fill the shells until approximately an hour before serving.
Ricotta Filling: Combine ricotta cheese, sugar, and vanilla. Beat until smooth, about 10 minutes at medium speed with an electric mixer. Stir in citron and/or chocolate. Place mixture in refrigerator to chill.
When ready to serve fill shells with cream or ricotta filling. Sprinkle ends of cannoli with finely chopped nuts or chocolate sprinkles. Then dust shells with confectioners sugar.

- Prep Time: 2 hours and 15 minutes
- Total Time: 2 hours and 30 minutes
Ingredients
- Eggs (12)
- Sugar (3 1/2 cups)
- Oil (2 cups)
- Lemon extract (2 T.)
- Orange extract (2 T.)
- Vanilla (1 tsp.)
- Flour (6 cups unsifted)
- Salt (1/4 tsp.)
Instructions
Beat eggs well. Add sugar gradually and then add oil. Beat until blended and then add extracts (lemon and orange) and vanilla. Add flour and salt a little at a time. Once everything is blended chill the dough for 2 hours or longer in order to enrich the flour. Pour batter sparingly on pizzelle iron. Cook 2 to 3 minutes or until slightly golden. Recipe makes 10 dozen.

Ricotta Turnovers Recipe

Ingredients
- Dough: Flour (3 cups)
- Crisco (1 cup)
- Sugar (1/2 cup)
- Salt (1 tsp.)
- Water (add by teaspoon to soften dough as necessary)
- Filling: Ricotta (1 pound)
- Sugar (1/4 cup)
- Cinnamon (1 tsp.)
- Topping: Confectioners sugar
Instructions
Dough: Mix all of the dough ingredients together. Knead to obtain soft dough consistency. Divide the dough in 4 pieces. Roll each piece out in a strip approximately 4 by 9 inches. Cut it across to create two 4 by 4 1/2 inch pieces of dough.
Filling: Mix ricotta cheese, sugar and cinnamon. Then, place a tablespoon of ricotta cream in the middle of the dough.
Pick up one of the shortest sides of the dough and fold it over the filling. With a pastry wheel, round up the corners so that you get a half moon shape. Put the cuttings aside. Pick up the ricotta turnover and pinch the edges together to seal them. You should pinch close to 1/2 inch of the dough edge. Lay the turnover on a floured surface and cover them. Repeat until you run out of dough. From the cutting you should be able to make 2 or 3 more turnovers. Have enough oil in a deep fryer to let the pastry float freely. Warm it (not to the smoking point). Have heat on medium. Holding the turnover from the middle, dip the sealed edges in the egg white and then put it in the oil. Turn the turnover often. They should be ready to be taken out of the oil in about 3 minutes. Lay them in a paper towel lined dish. Let cool and sprinkle with confectioners's sugar.
