My Favorite Potato Salad Recipe

This recipe is strictly old school.

There is nothing strange in it.

There aren't any unusual spices in it.

It's definitely your every day old fashioned potato salad recipe and it goes perfectly with my NY State BBQ Chicken recipe. (There will be links to that recipe on all the images.

So, read on friends, because this is the recipe that is going to tingle your taste buds, and bring back all kinds of memories of picnics at the park and at the beach.

My Traditional Potato Salad Recipe

Mia Ponzo's Traditional Potato Salad Recipe

Potato SaladServes 8 - 12

8 whole medium sized potatoes (Boiled until soft, but not mushy, and cubed, with or without skin, as you prefer)
3 Boiled Eggs (remove the shell and chop finely or mash with a fork)
I cup of mayonnaise (any kind)
2 Tbls prepared mustard
1/2 Tsp salt (preferably finely crushed sea salt, or organic salt)
2- 3 dashes of black or white pepper
6 Pimento Stuffed Green Olives (finely chopped)
1 Medium Sized Dill Pickle (finely chopped)
Dash (or so) Onion Powder
Dash (or so) Garlic Powder
Dash (or so) paprika
(All ingredients are "to taste" meaning add more or take out as you prefer)

Mix the mayonnaise and powdered ingredients together to make a smooth dressing.

Add the potatoes, eggs, olives, pickles, and mix well, but gently (so you don't mash up the potatoes).

Put in the refrigerator to cool.

If you want to garnish with olives, eggs, paprika, etc, you can do that right before serving.

EAT!!!!!!

    I have never heard of adding olives into potato salad but I can see how they would give a healthy zing to the potato salad. Your salad sounds delicious.
