It's pumpkin season already. I love this time of year - the changing colors, the cooler weather, and such good food! In this series of lenses, I bring you unusual and tasty pumpkin recipes. No pumpkin pie recipes here. You can find those anywhere.

When you're ready to try some a little new and different, I'll be waiting. Come on in and have some pumpkin chili.

Pumpkin Chili? Really? 

Yes, really. And it's good!

If you already know me, you know that I like unusual food combinations. Nothing disgusting or anything like that. I had to find out for myself what Velveeta in fudge would taste like. The idea of putting sauerkraut in a cake fascinates me.

The thing is, most of these things taste great. And the pumpkin chili recipe is like that too. My kids and husband loved this chili. They gobbled it up and didn't even taste the pumpkin, until I told them, of course. It doesn't really scream PUMPKIN when you eat it, but the pumpkin adds a depth to the chili that is so satisfying. I prefer the chili made with chicken.

This is a great way to sneak more veggies into your meals. The kids will thank you for it.

The Recipe for Pumpkin Chili 

Pumpkin Seed Pack
1 pound ground beef or chicken, cut into small pieces
2 tablespoons olive oil (if using chicken)
1 large onion, diced
1 green bell pepper, diced
2 (15 ounce) cans kidney beans, drained
1 (12 fluid ounce) can tomato juice
1 1/2 cups chicken broth
1 (28 ounce) can peeled and diced tomatoes with juice
1 (15 ounce) can pumpkin puree
1 tablespoon pumpkin pie spice
1 tablespoon chili powder
2 teaspoons cumin
2 tablespoons white sugar
Salt and pepper to taste

1. In a large pot over medium heat, cook meat until brown; drain.

2. Stir in onion and bell pepper and cook 5 minutes.

3. Stir in beans, tomato juice, broth, diced tomatoes and pumpkin puree.

4. Season with pumpkin pie spice, chili powder, cumin and sugar. Simmer 1 hour. Salt and pepper to taste.
