My Mom's Baked Macaroni and Cheese
A tried and true family favorite
- Serves: 6 (if you are lucky ;)
Ingredients
- 1 1/2 cups elbow macaroni
- 3 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 2 cups cheddar cheese cubed (good quality or sharp)
Instructions
Cook elbow macaroni in boiling, lightly salted water per package directions for al dente; drain (don't rinse) in a colander, set aside.
In the pasta pan melt butter; blend in flour; stir until golden brown about 2 minutes. Then slowly whisk in milk, stirring constantly until thick and bubbly.
Add cheddar cheese; stir in until melted. Toss in the cooked elbow macaroni, blending well.
Turn cheesy mixture out into a lightly buttered 1 1/2 quart casserole. Bake at 350° for 35-40 minutes or until golden brown on top and bubbly around the edges.

♥ Quite by accident I discovered that crumbled tortilla chips sprinkled on top of my mac and cheese casserole, right before putting it in oven to bake, ended up being absolutely delicious. - Serves: 6
Ingredients
- 12 ounces elbow macaroni or your favorite pasta
- 2 cups low-fat milk
- 2 tablespoons of all-purpose flour
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup low-fat cottage cheese
- 1 teaspoon dry mustard powder
- 1/8 teaspoon ground cayenne pepper
- 3/4 teaspoon of salt
- 2 tablespoons plain bread crumbs
- 2 tablespoons grated Parmesan cheese
Instructions
Heat oven to 350°. Coat a 2 1/2 or 3 quart baking dish or six 10 - 12 ounce ramekins with nonstick cooking spray. Cook pasta following package directions, to al dente. Drain and return to pot.
While the pasta cooks, combine low-fat milk and flour in a medium size saucepan and whisk until smooth. Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens slightly. Remove from heat and add cheese, whisking until smooth. Then whisk in cottage cheese, dry mustard powder, cayenne pepper, and salt. Stir cheese sauce into the cooked pasta.
Spoon mixture into the prepared baking dish or ramekins. Stir together bread crumbs and Parmesan cheese. Sprinkle on top. Bake for 25 - 30 minutes for large dish, 20 minutes for ramekins or until heated through. Remove from oven and let stand for 10 minutes before serving.

Creamette's Basic Baked Macaroni and Cheese
A 1980's Classic
Ingredients
- 2 cups uncooked Creamettes Elbow Macaroni (cooked as package directs and drained)
- 2 tablespoons margarine or butter
- 2 tablespoons flour
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 2 1/2 cups milk
- 2 cups shredded sharp Cheddar cheese
Instructions
Preheat oven to 375°F.
In medium saucepan, melt margarine; stir in flour, mustard and salt. Gradually stir in milk. Cook and stir until mixture thickens slightly. Remove from heat and add 1 1/2 cups cheese; stir until melted. Stir in cooked macaroni, turn into greased 1 1/2 quart shallow baking dish. Top with remaining cheese.
Bake 20 to 25 minutes or until bubbly. Refrigerate leftovers.

- 1/4 pound rigatoni macaroni
- 2 tablespoons unsalted butter plus more for greasing pan

Cook the macaroni according to package directions. Drain.
Preheat the oven to 375° F.
In a 1-quart saucepan, melt the butter over low heat. With a wire whisk mix in the flour, salt, and pepper. Cook 1 to 2 minutes or until a smooth mixture forms. Continue to whisk and gradually add the milk; cook about 5 minutes, until the mixture is thick and smooth. Remove from heat.
In a large mixing bowl, combine the cooked macaroni with the sauce, cheese, and Worcestershire sauce. Pour into a buttered 8x8x2-inch pan and bake for 25 minutes, or until the top browns.

This solid macaroni dish is made with eight cheeses and falls into the cut-it-with-a-knife macaroni category (a knife I'd like to lick). So if you prefer your macaroni on the creamy side, this dish may not be for you. But for those who love their macaroni and cheese to have some structural integrity, this is the mama of all macaroni and cheese dishes. Ingredients
- 1 lb medium shell pasta
- 1 large white onion diced
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1/4 cup grated Parmesan
- 1/4 cup grated Romano
- 1/4 cup shredded Gruyere
- 1/4 cup shredded sharp cheddar
- 1/4 cup shredded white cheddar
- 1/4 cup ricotta cheese
- 1/4 lb shredded Pecorino
- 1/4 lb cubed Gouda
- 1/2 teaspoon cayenne pepper
- 1/2 cup milk
- Salt and pepper to taste
- 2 to 3 tablespoons bread crumbs
Instructions
Preheat oven to 350°F.
In a large pot of salted water, cook the pasta to just under al dente. Drain and set aside.
In the same large pot, over high heat, saute the onions and garlic in the olive oil and 2 tablespoons of butter. When the onions begin to brown, reduce the heat to low, add the pasta and mix well. Gradually begin to add all the cheeses (save half of the Parmesan), the cayenne, and the milk stirring continuously. Salt and pepper to taste.
When everything is thoroughly mixed, transfer to a buttered 2 1/2-quart to 3-quart baking dish. (Use a spatula to get as much of the cheese sauce out of the pot as you can.)
In a small bowl, mix the remaining Parmesan with the bread crumbs and the remaining tablespoon of butter, softened. Cover the casserole with half of this mixture, saving the other half.
Bake, uncovered, for 35 to 40 minutes or until bubbly. Remove and cover with the remaining topping. Bake for an additional 10 to 15 minutes.
Let stand 10 minutes (if you can resist :) before serving.

Ingredients
8 oz dried pasta
1/2 cup sugar (you can add more or less depending on your sweet tooth)
3/4 cup cranberries (or your choice of dried fruits)
14 oz firm tofu (or the same amount of cottage/ricotta/farmers cheese)
1 tbsp vanilla extract
6 egg whites (you can use 3 eggs if your cholesterol is fine)
butter/oil for greasing the pan
Method
Preheat the oven to 375°F. Lightly grease a 9X5 loaf pan; set aside.
Cook the pasta al dente with a pinch of salt. Drain well and let it cool. Once cooled, mix all the ingredients in a big bowl and pour into the prepared loaf pan. Bake for one hour or until golden brown (cover with a piece of aluminum foil if top is getting too brown). Let the baked macaroni and cheese cool for a couple of hours before slicing. Warm or eat cold...depending on your taste.
