I made this Soup at Home in less than the time it takes to do a load of Laundry!

I am sure that you have all been to the famous Olive Garden Restaurant and had their great soup and salad.....And if you are like me, you wish you could recreate this delicious Italian soup dinner at home.

Creating an Italian Dinner with Soup and Salad at home is Easy.....Does it take a little bit of time? Sure, but it is soooooo worth the small effort.

The Zuppa Toscana soup is my favorite at the Olive Garden. And now this Zuppa Toscana Italian soup can be made right at home anytime day or night. Make a big batch so that you have some left over for the following day.

This Recipe for Zuppa Toscana just like it is made at the Olive Garden is so easy to make...I am sure you will want to make it again and again. The family will love it too!

There is really no reason why you should have to slave over a hot stove for hours just to please your family....this soup will make them believe that you were busy all day cooking when it actually only takes about an hour to cook.

Ingredients that you will need 

1 lb ground Italian sausage
1½ tsp crushed red peppers
1 large diced white onion
4 Tbsp bacon pieces
2 tsp garlic puree
10 cups water
5 cubes of chicken bouillon
1 cup heavy cream
1 lb sliced Russet potatoes
about 1/4 bunch of Kale

So what's the "Soup"? 

This Italian soup is just so easy to make....

First: Saute the Italian Sausage and Crushed Red Pepper in large pot such as the Scanpan 2 and 3/4 Quart nonstick Stock pot Available at Metrokitchen. available at Metro Kitchen


When sausage is cooked thoroughly, remove from pan and refrigerate until the other ingredients are fully prepared. I told you making this Italian soup was super easy!

Now in the same Stock Pot, sautee the bacon, onions and garlic until the onions are soft (this step should take approximately 15 minutes) This will create the base of the Zuppa Toscana Italian soup.


Mix Together Chicken Bullion and Water until fully dissolved and then add mixture to the Pot of onions and Garlic. Bring this mixture to a full boil. The Zuppa Toscana is almost done!

Next Add the Potatoes and cook on low boil until potatoes are soft
(this process will take about 30 minutes) Can't wait to eat this super yummy Italian soup

When Potatoes are softened, Add the heavy cream and heat thoroughly. Stir in Sausage mixture and add Kale just before serving.

What Else Goes with Zuppa Toscana Italian Soup? 

A great combination with this meal is a fresh Salad. Keep it simple:

Toss some Romaine Lettuce with a sliced tomato, Some sweet Red Onions, and a lite Italian dressing. Top with some shredded cheese and Greek peppers.

Serve Salad with Hot Italian Bread or Breadsticks.
