Favorites Year Round

Cookies are a big part of the Modranski Christmas Celebration. My first married Christmas I started the tradition, and it has continued through for 30 years. When the girls were home, they always baked with me. It was the highlight of my season. I don't bake as many cookies as I used to, generally under 100 dozen now. I don't try new recipes often, over the years I've found these favorites, and I stick with them. Truth is, if I changed one up, someone would be disappointed. Below you'll find each of the recipes you'll find me baking most Decembers. Most don't require much in the line of special ingredients. So, choose a recipe, take a few moments to bake, grab a glass of milk and enjoy.

My second favorite

Candy Cane Cookies

OVEN: 375° COOKING TIME: about 9 minutes
Makes about 4-5 dozen



INGREDIENTS

½ c. butter (or margarine), softened
½ c. shortening
1 c. powdered sugar
1 egg
1½ t. almond (I don't use the almond)
1 t. vanilla
2½ c. flour
½ t. red food color

DIRECTIONS

1. Mix all ingredients except food color in order listed
2. Divide dough in ½. Add food coloring to one half.
3. Take ½-1 t. from each half. Roll it in a ball and then roll back and forth on very lightly floured surface to form a rope.
4. Place on ungreased cookie sheet, curving the top to make a cane
5. Bake 9 minutes or until very light brown
6. OPT: while hot - sprinkle w/ a mixture of ½ c. crushed candy cane and 1/2 c. sugar (I've never done this)

My Best Cookie Baking Tips

  • 1When you are out of Brown Sugar - I use about a Tablespoon of molasses in my white sugar to create brown sugar. In fact, I don't even keep Brown Sugar in the house! I run out too quickly and a jar of molasses will last a LONG time!
  • 2For the Best Cookies - Always mix the sugar and the fat (shortening or butter) together first, then add the other ingredients. I always add the flour last because it takes the most work to mix it in, so I'm sure all of the other ingredients are mixed well.
  • 3For Soft Cookies - Don't over bake them - Check the first couple of trays early to make sure your oven isn't baking a little faster than usual.
  • 4Put Bread in with Your cookies to freshen up stale ones, but don't put it in too early. The slice seems to steal something away from fresh cookies
  • 5If kids are helping you bake - Don't sweat the small stuff! Have fun with them. Flour and sugar clean up. A few shells in the batter won't kill anyone and some of my favorite times are when I baked with my kids!

Sour Cream Coffee Cake

Peanut Butter Balls

Some call this a candy rather than a cookie

Makes about 10 dozen
No baking, but a double boiler could be handy



INGREDIENTS

2 sticks of butter
1 ½ c. powdered sugar
2 c. peanut butter
1 pkg. chocolate chips (I use another half bag)
2 T. Crisco (yep, you have to have this - I learned the hard way)
Recipe also calls for a bit of a stick of paraffin - but I don't use it!

DIRECTIONS

1. Mix first three ingredients
2. Roll into balls (I use the small Pampered Chef scoop)
3. OPT: Freeze these balls overnight)
4. Melt chocolate chips and Crisco in double boiler or microwave (use low power and stir every five minutes)
5. Set on wax paper or saran wrap to dry

I truly love this holiday! I am in awe that Christ would leave heaven to come to live in this world so He could one day be my perfect sacrifice.
