Grandma Modranski's Roll Cookies
AKA Sugar Cookies
- Serves: 4 Doz.
- Prep Time: Refrigerate dough overnight or longer
- Total Time: Bake for 5 or 6 minutes or until not doughy looking
The first few years we were married, Steve kept saying my Sugar Cookies just weren't as good as his Grandma's. I told him NO ONE'S cookies are ever as good as "Grandma's." Finally we visited an aunt who had Grandma's recipe. This recipe is tricky to make until you get the hang of it, so don't give up. It also doesn't work as well for a "glass smash" sugar cookie.
But when you get it right, these are delicious!
Ingredients
- 2 c. sugar
- 1 c. shortening
- 1 c. sour milk (1 c. milk w/ 1t. vinegar or lemon juice)
- 2 t. baking powder
- 2 t. (level) baking soda
- 2 eggs
- 4 c. flour
Instructions
HEAT OVEN TO: 400°
COOKING TIME: about 6 minutes
DIRECTIONS
DO NOT DOUBLE THIS RECIPE UNLESS YOU HAVE A HUGE BOWL
1. Mix ingredients in the order given
2. Refrigerate overnight (or put them in the freezer for a week or two - they raise more the longer they've been in the freezer)
4. Roll to 1/4" - 1/2" thick and cut with cookie cutters
5. Bake at 400° - 6 minutes or until cookies have a lot of air holes in them.
6. They don't have to be golden brown, but if there aren't a lot of air holes, they'll be doughy
7. Ice with your favorite icing
The trick to these cookies is in the rolling. Each handful of dough you roll will need a small scoop of flour (1/8c or so) kneaded in (the first handful may need a little extra). Go ahead, knead it well and add that flour. If they end up a little tough, you may have added too much - these cookies take some finesse, but you can do it!
MY FAVORITE ICING
1 Bag of powdered sugar
1 c. shortening
Milk
Mix the powdered sugar and shortening. Add milk till the consistency is the way you like it. If you're adding liquid food coloring, mix it a little thick.

Cream Wafers
My family's second favorite cookie
- Serves: 4-5 Dozen
- Prep Time: Heat Oven to 375°
- Total Time: 7-9 Minutes
My sisters LOVE this cookie. They always want me to make them a tin of these for Christmas. I'm sure they'll be as popular with your friends and family!
Ingredients
- 1 c. butter (or margarine)
- softened
- 1/3 - 1/2 c. heavy whipping cream
- 2 c. flour
Instructions
HEAT OVEN TO 375°
COOKING TIME: 7-9 minutes
1. Mix first three ingredients. Chill for 2 hours.
2. Roll VERY THIN on a floured surface
3. Cut into about 1" circles (I use the hole from a doughnut cutter or a small Tupperware container. Some pill bottles work too)
4. Coat rounds with sugar (lots of sugar on them)
5. Place on ungreased cookie sheet and prick with a fork about 4 times
6. Bake at 375° for 7-9 minutes
7. Mix filling ingredients (see below)
8. Allow cookies to cool and use filling to make sandwiches.
FILLING
1/4 c. soft butter
3/4 c. powdered sugar
1 egg yolk
1 t. vanilla
Cheesecake Cookies
My Personal Favorite
- Serves: 4-5 Dozen
- Prep Time: OVEN: 350°
- Total Time: 15 Minutes - then 25 Minutes
I love these cookies. The only problem with them is they're just light enough that you can just keep eating them!
I usually double this recipe and put it in a 9x13 pan.
Ingredients
- 1/3 c. butter
- 1/3 c. brown sugar
- 1 c. flour
- 1/2 c nuts
- 1/4 c. sugar
- 1 8 oz. pkg. cream cheese
- 1 egg
- 1 t. lemon juice
- 2 T. milk
- 1/2 t. vanilla
Instructions
HEAT OVEN TO: 350°
COOKING TIME:12-15 minutes then 25 minutes
CRUST DIRECTIONS
1. Mix first four ingredients.
2. Set aside one cup of crust mixture
3. Press remaining crumbs in 8x8 pan
4. Bake 12-15 minutes at 350°
5. Mix Filling ingredients:
FILLING DIRECTIONS
6. Mix remaining ingredients
7. Pour and spread on top of crust
8. Top with remaining crumbs
8. Bake 25 minutes at 350°
9. When cool, cut into 1" squares (or larger if you want bigger cookies)
Nut Roll Cookies
My second favorite
- Serves: 8-10 Dozen
- Prep Time: Refregrate overnight
- Total Time: Bake at 375°about 10 minutes
These take a lot of time, but they are worth every minute
Ingredients
- 1 lb. butter (or margarine)
- 6 c. flour
- 3 T. Sugar
- 1 cake yeast
- 1 c. warm milk
- 3 eggs
- 4-5 c. Ground nuts
- 1/2 c. sugar
Instructions
HEAT OVEN TO: 375°
COOKING TIME: about 10 minutes
DOUGH DIRECTIONS
1. Cut butter into flour and sugar
2. Dissolve cake years in 1c warm milk
3. Add yeast to flour mixture with unbeaten eggs
4. Mix with hands - good dough will be sticky
5. Refrigerate overnight
6. Divide dough into 10 parts
7. Roll very thin on sugar
8. Cut into wedges
9. Put nut filling on wedges and roll
NUT FILLING:
Mix together final two ingredients and moisten with water just enough to hold the nuts and sugar together
Bake at 375° for about 10 minutes
Candy Cane Cookies
OVEN: 375° COOKING TIME: about 9 minutes
Makes about 4-5 dozen
INGREDIENTS
½ c. butter (or margarine), softened
½ c. shortening
1 c. powdered sugar
1 egg
1½ t. almond (I don't use the almond)
1 t. vanilla
2½ c. flour
½ t. red food color
DIRECTIONS
1. Mix all ingredients except food color in order listed
2. Divide dough in ½. Add food coloring to one half.
3. Take ½-1 t. from each half. Roll it in a ball and then roll back and forth on very lightly floured surface to form a rope.
4. Place on ungreased cookie sheet, curving the top to make a cane
5. Bake 9 minutes or until very light brown
6. OPT: while hot - sprinkle w/ a mixture of ½ c. crushed candy cane and 1/2 c. sugar (I've never done this)
My Best Cookie Baking Tips
- 1When you are out of Brown Sugar - I use about a Tablespoon of molasses in my white sugar to create brown sugar. In fact, I don't even keep Brown Sugar in the house! I run out too quickly and a jar of molasses will last a LONG time!
- 2For the Best Cookies - Always mix the sugar and the fat (shortening or butter) together first, then add the other ingredients. I always add the flour last because it takes the most work to mix it in, so I'm sure all of the other ingredients are mixed well.
- 3For Soft Cookies - Don't over bake them - Check the first couple of trays early to make sure your oven isn't baking a little faster than usual.
- 4Put Bread in with Your cookies to freshen up stale ones, but don't put it in too early. The slice seems to steal something away from fresh cookies
- 5If kids are helping you bake - Don't sweat the small stuff! Have fun with them. Flour and sugar clean up. A few shells in the batter won't kill anyone and some of my favorite times are when I baked with my kids!
Sour Cream Coffee Cake
- Serves: 10-12
- Prep Time: 20 minutes
- Total Time: 70 minutes
A Modranski Family Christmas Breakfast is not complete without this easy to make Coffee Cake. Thanks to my Aunt Karen for this recipe, you'll find it to be the most moist, rich breakfast cake you've ever baked.
Ingredients
- 1 c. Soft Butter
- 2 c. Sugar
- 2 Eggs
- 1 c. Sour Cream
- 1/2 t. Vanilla
- 2 c. Flour
- 1 t. Baking Powder
- 1/4 t. Salt
- 4 t. Sugar
- 1 t. Cinnamon
- 1 c. nuts (optional)
Instructions
1. Mix butter and sugar.
2. Add eggs one at a time
3. Add sour cream & vanilla
4. Sift together layer one dry ingredients
5. Fold dry ingredients into mixture (all except last three)
6. Grease & flour a 9x13 (or Bundt) pan
7. Pour/Drop ½ batter into pan
8. Mix together layer 2 ingredients (last three ingredients)
9. Sprinkle ½ evenly over the batter in the pan.
10. Drop/Pour remaining batter
11. Top with remaining sugar mix
12. Bake at 350° for 45-50 minutes
Peanut Butter Balls
Some call this a candy rather than a cookie
Makes about 10 dozen
No baking, but a double boiler could be handy
INGREDIENTS
2 sticks of butter
1 ½ c. powdered sugar
2 c. peanut butter
1 pkg. chocolate chips (I use another half bag)
2 T. Crisco (yep, you have to have this - I learned the hard way)
Recipe also calls for a bit of a stick of paraffin - but I don't use it!
DIRECTIONS
1. Mix first three ingredients
2. Roll into balls (I use the small Pampered Chef scoop)
3. OPT: Freeze these balls overnight)
4. Melt chocolate chips and Crisco in double boiler or microwave (use low power and stir every five minutes)
5. Set on wax paper or saran wrap to dry
Kiss Cookies
Aka Peanut Butter Blossoms
- Serves: 4 Dozen
- Prep Time: 15 minutes
- Total Time: couple hours
These cookies are in the top five of favorite Modranski cookies. In fact, they're such a hit that I generally double the recipe and get a big bag of kisses. Great for Christmas or anytime!
OVEN: 375° COOKING TIME: 10-12 minutes
Ingredients
- 1/2 c. shortening
- 1/2 c. peanut butter
- 1/2 c sugar
- 1/2 c. brown sugar
- 1 egg
- 1 t. vanilla
- 2 T. milk
- 1 t. soda
- 1 3/4 c. flour
- Hershey's Kisses
Instructions
Mix ingredients in the order listed except kisses
Shape into tsp. size balls
Roll balls in sugar
Bake 10-12 minutes at 375°
Put a Kiss in each cookie while they're still hot
Thumbprint Cookies/Russian Tea Cakes
AKA Mexican or Danish Wedding Cookies
- Serves: 4 dozen
- Prep Time: 25 Minutes
- Total Time: about 15 Minutes to bake
OVEN: 350°
Ingredients
- 1 cup Butter
- 1/2 cup powdered sugar
- 1/2 Tablespoon vanilla
- 2 - 2 1/4 cups flour
- OPTIONAL: Chopped Nuts or Pecans
Instructions
Mix all ingredients
Roll into balls place on ungreased cookie sheet
For Thumbprint press thumb to make dent in middle
For Russian Tea Cakes - leave the cookies in balls to bake and coat with powdered sugar when cool
Yes, these two recipes are virtually the same, so I mix a double batch and make 1/2 and 1/2 when I make them.
