Search For The Best Gyro Meat Recipe

I live in St. Louis. And there is a mom and pop Gyro House here that makes the best Gyros I have ever eaten for a quick fix. Unfortunately, I can't seem to find anywhere that makes the meat, or even sells it too the public. There is a Gyro kit at the grocery store that is ok, but the meat is lacking in the high flavor that I want.

I have tried a few different recipes, but have yet to find one that really produces the flavor I seek from the Gyro House.

I know they don't make their meat there, and I also know the true Gyro is layers of whole meat. However, I am hoping that someone has a recipe that I can use ground meat and seasonings to make this.
