If you love good food and if you are looking for really tasty recipes, this lens is for you. This lens is about all the recipes in my personal best recipes cookbooks. I'm always on the look for new and exiting recipes. On the other hand I love eating at restaurants but in the end that works our pretty expensive. Now the exciting news is that I am going to tell you about some of the top cookbooks I have come across.

The first top cookbook, a truly "Best Recipes Cookbook" I want to tell you about is one from RecipeSecrets.net. This top cookbook has recreated all the loved restaurant dishes for you to cook at home. It is amazing how easy most of these dishes are and on top of it they are probably more healthy that their "real" counterpart, they do not contain as much fat and as many preservatives as many restaurant meals. You will be surprised to see that most of the recipes use ordinary ingredients that you have in the kitchen already!

Tasty Pumpkin Pie

What will a best recipe cookbook be without a pumpkin pie recipe. It is November and Thanksgiving is around the corner. This is the time for Pumpkin Pie! Here is another recipe from my Best Recipe Cookbook.

What You Need For This Recipe:

  • 1 9 in pie crust

  • 1/2 C brown sugar

  • 1 TBSP all purpose flour

  • 1 1/2 C pumpkin puree

  • 1 1/2 C heavy cream

  • 1/2 tsp. salt

  • 1 tsp. cinnamon

  • 1 tsp ginger

  • 1/4 tsp. nutmeg

  • 1/2 C light corn syrup

  • 3 eggs, slightly beaten

  • 1 tsp. vanilla

 

Method For This Recipe


  1. Place the pie crust in a 9 in pie plate; prick the bottom of the curst a few times with a fork and set aside.

  2. Place the brown sugar in a large mixing bowl.

  3. Add the flour and toss to combine.

  4. Add the pumpkin puree and heavy cream.

  5. Use an electric mixer on medium speed and beat until completely combined together.

  6. Sprinkle in the salt, cinnamon, ginger and nutmeg.

  7. Stir with a rubber spatula until combined well.

  8. Pour in the corn syrup and mix with the mixer on medium speed.

  9. Add the beaten eggs and the vanilla and mix until smooth.

  10. Pour the pumpkin mixture into the pie shell.

  11. Bring the oven temperature to 350 degrees.

  12. Cover the edge of the pie shell with aluminum foil to keep it from over cooking.

  13. Bake 25 minutes.

  14. Remove the foil so the edges can brown and continue baking 30 minutes or until a knife inserted in the center of the pie comes out clean.


8 Servings

The removal of the foil time can be adjusted according to how your oven bakes. If the oven bakes hot then leave the foil on for a longer period of time if it bakes a little cooler you may need to remove the foil sooner. When testing for doneness if the knife does not come out clean, allow the pie to bake another 2 to 3 minutes before testing again.

Ingredients:

  • 2 big cooked potatoes

  • A little oil

  • 1 onion, chopped

  • 1 red pepper, cut into small pieces

  • 1/3 lb spinach chopped

  • ½ lb ham slices

  • 2 tomatoes, thinly sliced

  • 8 eggs

  • 1 cup cream

  • 1 cup cheddar cheese, grated



Method:

  1. Set oven at 350° F

  2. Cut potatoes in thin slices.

  3. Place 1/3 on the bottom of a greased oven dish.

  4. Heat oil and sauté onion till soft.

  5. Add spinach and red pepper and sauté about 3 minutes until spinach is soft.

  6. Spoon ½ of the spinach mixture over the potatoes.

  7. Place ½ of the ham and tomato slices on top of spinach mixture.

  8. Place another 1/3 of the potato slices on top.

  9. Repeat layers, ending with a potato layer.

  10. Beat eggs and cream.

  11. Pour over dish.

  12. Sprinkle cheese over and bake for 35 minutes or until golden brown.

  13. Serve lukewarm.

From My Personal Best Recipes Cookbooks: Mexican Beans 

Here is another tasty recipe from my personal best recipes cookbook. To be honest, it is a very "South African" version but, still very tasty and for those that are not so fond of food that is too hot, this one is hot but not too hot, I hope! This is a quick and easy recipe if you use canned beans.

Ingredients:

  • 1 Tbsp fat

  • 2 Tbsp finely chopped onions

  • 2 Tbsp finely chopped green peppers

  • 1 cup grated cheese

  • 1 Tbsp Worcester sauce

  • ¾ tsp salt

  • 2 tsp chili powder

  • 2 ½ cups red kidney beans home-cooked or canned


Method for this recipe:

  1. Heat the fat.

  2. Add onion and green pepper.

  3. Cook over low heat until soft - not browned.

  4. Add grated cheese.

  5. Stir over low heat until cheese is melted.

  6. Add seasonings.

  7. Gently fold in beans. (Otherwise you end up with a sloppy mess!)

  8. Heat.

Another Recipe From My Personal Best Recipes Cookbooks: Watercress And Almond Soup 

Soup still remains a firm favorite as a starter. Try this tasty Watercress and Almond soup. It is very tasty and the ground almonds give it a nutty taste.

Ingredients for this recipe:

  • 1 oz. Butter

  • 1 Onion chopped

  • 2 Bunches of watercress chopped

  • 1 Pint vegetable stock

  • 1 Tablespoon cornflour

  • ½ Pint semi-skimmed milk
  • 2 oz. Ground almonds

  • Salt and pepper to taste

  • Flaked, toasted almonds to garnish



Method for this recipe from my best recipes cookbooks:

  1. Melt the butter in a medium saucepan over a low heat.

  2. Add the onion and cook until soft but not browned.

  3. Add the watercress and cook for 2 minutes.

  4. Stir in the stock.

  5. Cover and simmer for 10 minutes.

  6. Transfer the soup to a blender and blend until smooth

  7. Return the soup to the pan.

  8. Blend the cornflour in a small bowl with a tablespoon of the milk to make a smooth paste.

  9. Add the paste to the soup.

  10. Stir in the rest of the milk and the ground almonds

  11. Place the pan over a moderate heat for 5 minutes to reheat the soup, stirring all the time.

  12. Serve sprinkled with flaked, toasted almonds.

Best Recipes Cookbooks: South African "Bobotie" from my personal Best Recipes Cookbook 

A very tasty mild curried meat dish baked in the oven.

Today's recipe from my personal best recipes cookbooks is a very traditional South African dish that we originally got from the Cape Malay community. They are very good cooks and they love mild but tasty dishes. This is nothing like a traditional Indian curry. Try it, I know you will love it and it will become one of your favorite dishes.

What you need for this recipe:


  • 2 Lb. minced beef

  • 1 Slice of white bread

  • 2 Eggs

  • 1 Teaspoon sugar

  • ½ Teaspoon pepper

  • 2 Tablespoons of lemon juice

  • 2 Onions

  • 1 Cup milk

  • 1 Tablespoon of curry powder

  • 2 Teaspoons salt

  • ½ Tablespoon turmeric

  • ½ Cup pitted raisins

  • 2 Tablespoons chutney, if available, use apricot jam as an alternative.

  • A Few bay leaves or if it is available a few lemon leaves.



How to make this recipe:


  1. Chop the onions and lightly sauté them in oil. Set aside.
  2. Brown the meat in the oil.
  3. Add the onions.
  4. Soak the bread in the milk.
  5. Press the milk from the bread.
  6. Mix all the ingredients except 1 egg and ½ cup of milk.
  7. Put the mixture in an ovenproof dish.
  8. Roll up the leaves and stick them randomly in the bobotie.
  9. Bake for 1 ½ hours at 350oF.
  10. Beat the egg and remaining milk together.
  11. Pour over the meat ½ an hour before it is done.


Serve this dish with "Yellow Rice"* and vegetables. In South Africa we will serve it with sweet potatoes and cooked green beans.

*Yellow Rice:

Cook 1 cup of rice with a tablespoon full of turmeric and a tablespoon full of brown sugar and salt to taste. Other wise the rice is cooked in the normal way.

Bobotie is also very tasty only served with yellow rice and a mixed salad.

Best Recipes Cookbooks - Fish Fillets In Mushroom-Cheese Sauce Recipe 

Quick and easy fish recipe.

This fish recipe from my personal Best Recipes Cookbooks is quick, easy and tasty. It is ideal for a day when you do not really feel like cooking but, you still want to serve you family a tasty nutritious meal. Serve the fish with rice and a mixed salad or if you have a little more time some tasty cooked vegetables. I sometimes even add a little frozen mixed vegetables to the fish before I bake it and then I simply allow a little extra cooking time for the vegetables.

Ingredients for this recipe:


  • 1 ½ lb. Fish

  • Paprika

  • 1 Cup of grated strong cheese

  • Salt and pepper to taste

  • 1 Tin cream of mushroom soup

  • ¼ Cup sherry



Method for this recipe from my personal best recipes cookbooks:

  1. Arrange the fish in a baking dish and season.

  2. Mix the remaining ingredients, except the paprika, and pour it over the fish. Sprinkle the fish with paprika and bake it at 350 o F for 25 minute or until cooked.



Remember to check whether fish is cooked, slightly part it in the middle and if it is not transparent any more, it is cooked.

A Few Things Worth Knowing


  • Soak liver for pâté in milk for an hour to eliminate any unpleasant odors. Pork liver is a good choice for pâté.


  • To get rid of the smell of boiling cabbage, add 1 tsp. of vinegar.


  • Add a little prepared mustard to the white sauce for cauliflower to add an exceptional flavor.


  • A pinch of curry powder adds extra flavor to mashed potatoes.


  • Fresh beetroot leaves make an excellent alternative to spinach.


  • If a dish is too salty, add 1 tsp. of vinegar.


  • Add 1 teaspoon of mustard powder and 2 teaspoons of sugar to mayonnaise for an extra piquant flavor.

Ingredients For This Recipe From My Personal Best Recipes Cookbooks:

  • 1 Large chicken

  • 1 Cup condensed cream of chicken soup

  • 1 Cup sliced mushrooms

  • 1 Red pepper seeded and chopped

  • Salt and pepper to taste

  • A pinch of thyme

  • 1/2 Cup of cream

  • 1/2 Cup sherry

  • 2 Tablespoons oil

  • 1 Medium tin pineapple chunks, drained or freshly cooked pineapple chunks

Method for this recipe: 


  1. Sprinkle the chicken with salt and pepper and place in a large pot or casserole with a tight-fitting lid.Add a little water and a pinch of thyme, cover and cook very slowly until tender.

  2. Remove the chicken from the bone, discard the skin, and place the chicken pieces in an oven-proof dish.

  3. Heat the soup, cream and sherry in a saucepan, stirring occasionally.

  4. Saute the mushrooms in the oil, drain and add to the soup mixture with the red pepper and pineapple chunks.

  5. Pour this sauce over the chicken pieces, cover and bake in a 300 degrees Fahrenheit oven for 15-20 minutes,

  6. Serve with rice and a salad.

This recipe from my "Best Recipe Cookbooks" is really delicious. In all honesty it is not completely authentic, real Zambian cooking is a little spicier. Never the less, it is a favorite recipe of my "Best Recipe Cookbooks" and it is a chicken recipe worth trying.

Ingredients for this chicken recipe:

  • 4 Lbs. chicken pieces

  • 1Green Pepper

  • 3 Cups chopped tomatoes

  • A little flour

  • 2 Medium sized onions

  • 1 Cup chopped mushrooms

  • 2 Teaspoons salt

  • Oil for cooking

Zambian Chicken Recipe: Chicken Savory


  1. Heat a little oil in a pot.

  2. Cover the chicken in a little flour.

  3. Brown the chicken very well on all sides by turning it regularly.

  4. Chop the onions.

  5. Chop the green pepper.

  6. When the chicken is nice and brown, add all the ingredients and simmer for about an hour until the chicken is tender.

  7. Serve the chicken with rice.

From My Personal Recipes Book: South Africa's Best Baked Corn Bread 

Ingredients:

  • 9 cups minced uncooked corn

  • 6 eggs

  • ½ cup butter or margarine

  • 8 cups self-raising flour

  • 1 Tbsp salt


Method:

  1. Preheat the oven to 350° F.

  2. Grease 3 x 6-cup loaf pans

  3. Beat the eggs.

  4. Heat the butter or margarine until softened but not melted.

  5. Mix the eggs and butter or margarine with the minced corn.

  6. Add the self-raising flour and salt and stir until mixed.

  7. Spoon the dough into the loaf pans.

  8. Bake the loaves for 45 minutes.

  9. Turn out onto a wire rack and allow to cool.

South African "Vetkoek" with Buttermilk

This Best cookbooks recipe is a very traditional South African recipe, used when bread is not available. It originated on the farms where people did not always had the time for the lengthy process of baking bread and they then used this quick and very tasty alternative. In modern times it has become a South African delicacy. I hope you enjoy this top recipe from my personal "Top Recipe Cookbook"

Ingredients for this best recipe from my best recipe cookbooks:


  • 4 Cups of flour, sifted

  • 2 Cups of buttermilk

  • 1 Teaspoon of baking soda

  • 1 Teaspoon cream of tartar

  • 1 ½ teaspoon salt

  • 1 Tablespoon of castor sugar

  • 3 Tablespoon of soft butter

  • 1 Bottle of oil



Method for this recipe from my best recipe cookbooks:


  1. Combine the buttermilk, baking soda, cream of tartar, salt and castor sugar.

  2. Slowly mix the above into the flour.

  3. Add the butter and mix well.

  4. Cover the dough with plastic and let it rise in a warm place for an hour.

  5. Pinch of small pieces of dough and bake it in warm oil until golden and fully done.



It may take a little time and experience to know how hot the oil should be for the "vetkoek" to be fully cooked and brown without burning or on the other hand drying out.
Serve the "vetkoek" with butter, jam, honey or syrup.
"Vetkoek" can also be served with savory mince or curried mince.

Marinade Recipe For Chicken Over The Coals:

Ingredients for your chicken recipe:

  • ½ cup chutney

  • ¼ cup lemon juice or vinegar

  • ¼ cup tomato sauce

  • 1 tbsp. Worcester sauce

  • 1 dessertspoon curry powder

  • mixed herbs to taste

  • salt and pepper



Method for your chicken recipe:

  1. Mix all ingredients except salt and pepper.

  2. Cut one large chicken into portions.

  3. Bake in a closed container at moderate heat until lightly cooked.

  4. Cover the hot chicken portions with the marinade and marinate in the fridge overnight.

  5. Barbeque the chicken portions slowly over the coals.

  6. Turn over every now and again, basting often with the marinade.

  7. Season the chicken with salt and pepper towards the end of barbequing time.

Marinade Recipe For Braised Chicken Portions 

Marinade for Scrumptuous Braised Chicken Portions

Ingredients For This Recipe:

  • Enough chicken portions of your choice to feed ten people

  • ½ cup sunflower oil

  • ¼ cup golden syrup

  • 2 tbsp soy sauce

  • 2 tbsp soft brown sugar

  • 1 tbsp cornflour

  • 1 tsp ground ginger

  • 1 tsp salt a pinch of pepper


Method For This Recipe:

  1. Place portions in a large heavy-based frying pan with a lid.

  2. Mix the sunflower oil, golden syrup and soy sauce and pour over the chicken.

  3. Mix the remaining ingredients and sprinkle them on top.

  4. Cover with the lid and braise the chicken over moderate heat until done.

  5. Turn the portions often to prevent burning.

  6. Serve hot with crunchy vegetables and rice, or cold with a green salad and a corn salad.

Tuna Fritters With Tangy Sauce 

An easy recipe, from my personal best recipes cookbooks, for quick meals!

Ingredients for this recipe:

  • 2 small tins tuna, drained

  • 1 onion, finely chopped

  • 4 hard boiled eggs, finely chopped

  • 1 ½ cups fresh bread crumbs

  • 2 Tbsp parsley, chopped

  • Peel of 1 lemon, finely grated

  • Oil for shallow fry.



Ingredients For The Sauce

  • 1 cup mayonnaise

  • 1 Tbsp lemon juice

  • 1 gherkin, finely chopped

  • 2 Tbsp fresh parsley, chopped.


Method For The Fritters:

  1. Mix all ingredients for fritters, except oil.

  2. Roll in tight balls; flatten.

  3. Fry in heated oil till golden brown on both sides.


Method For The Sauce

Mix all ingredients and serve fritters with sauce in a separate bowl.

From Magriet's Personal "Best Recipes Cookbook" (Ginger Beer) 

Traditional South African Ginger Beer (More A Soft Drink Than A Beer, Suitable For Children)

Ingredients for this recipe

  • 6 Lbs. sugar

  • 1 Cup bruised ginger (not too fine)

  • 1 Packet cream of tartar

  • 1/2 Packet tartaric acid

  • 20 Cloves

  • 1 Cup bruised raisins

  • 1 Cup honey or golden syrup

  • 1/2 A cake of compressed yeast

Method For This Recipe 

This is what you have to do


  1. Put everything in a small barrel or earthen jar.

  2. Fill up with boiling water

  3. On the next day put in half a cake of compressed yeast, mixed to a paste with lukewarm water.

  4. When the raisins float to the top, bottle it and close the bottles with corks tied down very well.

  5. Let the bottled ginger beer rest for a few days.

  6. Makes about 24 bottles of ginger beer.

Chocolate Tart 

What is a meal without dessert?

CHOCOLATE TART

Crust
Ingredients:

  • ¾ pkt Marie biscuits

  • 1/3 cup butter


Method:

  1. Crush the biscuits.

  2. Melt the butter and mix with the biscuit crumbs.

  3. Press into the base of an 8-cup pie dish.


Filling

Ingredients:

  • 2 cups milk

  • 4 extra large eggs

  • ½ cup sugar

  • 2 Tbsp. cocoa

  • 1 Tbsp. cake flour

  • 1 Tbsp. gelatin

  • ¼ cup water

  • 2 pkts sponge fingers

  • Cream and grated chocolate for decoration


Method:

  1. Heat the milk to boiling point. Separate the eggs.

  2. Beat the egg yolks and f1 Tbsp of the sugar.

  3. Beat into the milk. Mix 2 Tbsp. of the remaining sugar with the cocoa and cake flour.

  4. Stir into the milk mixture.

  5. Bring just to the boil, stirring constantly.

  6. Soak the gelatin in the cold water.

  7. Stir into the hot milk mixture.

  8. Place half the sponge fingers loosely in the crust.

  9. Pour half the hot chocolate filling on top.

  10. Crisscross the remaining sponge fingers loosely on top of the filling and top with the remaining filling.

  11. Allow to cool, then chill until set and decorate as desired.


Tip

The warmer the chocolate mixture the better it soaks into the sponge fingers. Marie biscuit crumbs can also be used for decoration.

Succotash


  • 1 ½ cup Lima beans (canned)

  • 1 ½ - 2 cups whole kernel corn (cooked)

  • 2/3 cup cream

  • 2-3 Tbsp butter

Heat the vegetables and drain. Add cream and butter. Simmer for 5 minutes.

Try this very tasty recipe!

Ingredients:

  • 12 chicken wings, tips removed

  • 5 dried bay leaves, crumbled into small bits

  • ¾ tsp caraway seeds

  • ½ -3/4 tsp cayenne pepper

  • ¾ tsp ground coriander

  • ¾ tsp ground cumin

  • 4 garlic cloves, finely chopped

  • 1½ tsp dry mustard

  • 2 tsp paprika

  • ¾ tsp dried thyme1/2 tsp salt

  • 2 tbsp brandy

  • 2 tbsp fresh lemon or lime juice


Method:

  1. Defat the wings by cooking them in boiling water for 10 minutes.

  2. Drain, and set aside to cool.

  3. Preheat the oven to 190°C (375°F or Mark 5)

  4. Using a large mortar and pestle, grind the baby leaf bits to a fine powder, then add the caraway seeds, cayenne pepper, coriander, cumin, garlic, mustard, paprika, thyme and salt and grind together for about 10 minutes.

  5. Add the brandy and lemon or lime juice to the pulverized herbs and stir into a thick paste.

  6. With a pastry brush, cover both sides of each wing with the herb paste.

  7. When no more paste remains in the mortar, squeeze the last few drops from the brush. Arrange the wings on a baking sheet.

  8. Bake until the skin turns a deep brown and is quite crisp (30 - 35 minutes).


Steamed vegetable marrow and sautéed mushrooms go well with this dish.
