Biscuits and gravy is definately a southern food. I have met people from the northern states who had no idea what is was! Basically, they are biscuits that are covered in homemade gravy that is made with grease, flour, and milk. It may not sound appetizing, but they are delicious! All you have to do is try biscuits and gravy one time and you will be hooked. This page explains how to make the biscuit gravy, which is the hardest part of the dish. It does take some practice to get it right, but once you have it, it will come naturally everytime .

Southern Gravy Recipe

You have to have grease to start this recipe. To do that you need to start by cooking a package of sausage in your pan. Here is where you have some options. You can make sausage patties and then remove them from the grease; or, you can crumble the sausage and leave it in the pan while you make the gravy. It is delicious whether you decide to include sausage in your gravy or serve it on the side. Either way...do not drain all of the grease. You need it! You need about 3-4 tsp left in the pan. Now you can start the gravy.

Start with your warm grease. Stir about 3 tablespoons of flour into the grease and cook over medium heat until browned. Stir the 'roux' constantly for about 5 minutes or until it turns golden brown.

Stir in 1 C of milk and keep stirring until it reaches the desired thickness. This is a rather thick gravy, and it should not be soupy at all. When done, season with salt and pepper and pour over biscuits. Enjoy!
