Black Bean Soup Recipe
Ingredients
- chopped cilantro
- 3 quarts water
- 3 fresg ginger root 1 inch chunks
- large garlic cloves
- 1 diced onion
- 1 whole onion
- 1 tsp curry powder
- 1 1/2 tsp cumin
- 1 tbsp oregano
- 2 tsp green or red chili powder
- 2 large cans of black beans
Instructions
1. Heat in a large sauce pan the water and the fresh ginger root chunks.
2. Toss in the large garlic cloves together with the diced onion and the whole onion. Add in the curry powder and the cumin.
3. Add the oregano and green chili powder.
4. Toss the 2 cans of black beans. Let it simmer for 30 minutes.
5. For a creamier broth, blend 1 -2 cups broth and beans in a blender and toss into the soup.
6. Then add a handful of chopped cilantro and garnish it with diced red peppers.
