Using Blue Cheese In Your Recipes

Blue cheese is creamy white with distinctive bluish-green veins. It is semi soft in texture and crumbles rather easily. Blue cheese has a piquant, salt and pepper flavor.

One ounce portion of blue cheese contains 103 calories. It also provides protein, calcium, vitamin A and the B vitamin, riboflavin.

The surfaces of blue cheese should be covered tightly with foil or clear plastic wrap when stored. Properly wrapped, it will keep several weeks in the refrigerator or freezer.

Wedges of blue cheese with fresh apples or pears will always be popular for dessert. Because it goes so well with fruit and vegetables, many salad or sauce combinations are possible. Blue cheese also appears in dips for crackers or in appetizing tidbits. It brings elegance when crumbled over steak or blended into a hamburger mixture before broiling the meat patties.

Zippy Blue Cheese Sauce

Blue Cheese SauceIn a saucepan melt 2 tablespoons of butter or margarine. Blend in 2 tablespoons of all-purpose flour.

Add 1 cup of milk and 1 chicken bouillon cube. Cook and stir until the mixture thickens and bubbles.

Remove from the heat. Stir in 1/4 cup dairy sour cream and 1 ounce blue cheese, crumbled. Heat thoroughly, but do not boil.

Serve over vegetables.

Tangy Blue Cheese Burgers

Blue Cheese Burgers1/3 cup chopped onion
1/3 cup crumbled blue cheese
1 tablespoon Worcestershire sauce
2 teaspoons salt
2 pounds ground beef
1 unsliced loaf French bread
1/2 cup butter, softened
1/4 cup prepared mustard

Combine the onion, blue cheese, Worcestershire sauce, and the salt. Add the meat and mix well. Shape the mixture into 10 oval patties slightly larger than the diameter of the French loaf.

Cut the French loaf in twenty 1/2 inch slices. Blend the butter and the mustard and spread on one side of each bread slice. Reassemble the loaf, placing the buttered sides together. Wrap in heavy foil and place on the grill for 15 minutes.

Broil the burgers for about 8 minutes on each side. Serve between the slices of bread.

Heavenly Blue Cheese Dogs

Blue Cheese Hot DogsCombine 1/3 cup dairy sour cream, 1 ounce blue cheese, 1/4 cup sweet pickle relish, 2 tablespoons instant minced onion, and 2 tablespoons mustard.

Spread 2 tablespoons of the cheese mixture on each of 8 split and toasted buns.

Insert a hot dog into each bun.

Wrap the buns in heavy foil and heat in a 400 degree oven or on a grill for about 10 minutes.
