Blueberry Muffin Recipe

Ingredients

• 3 cups all-purpose flour
• 3/4 teaspoon salt
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1 cup white granulated sugar
• 1 (1/2 cup) stick butter
• softened
• finely grated zest from one lemon
• 2 tablespoons vegetable oil
• 2 large eggs
• 1 cup sour cream
• 1/2 cup milk
• 1/2 taspoon lemon extract
• optional
• 2 cups fresh blueberries

Instructions

1. Preheat oven to 375F.
2. Prepare muffin tin and place the muffin cups.
3. In a huge bowl, cream together butter and egg until fluffy using an electric mixer.
4. Add in 1 egg and vegetable oil. Beat together.
5. Add the last egg and beat it with the mixture.
6. Pour in sour cream and milk, whisk.
7. Add in half teaspoon of lemon extract and lemon zest.
8. In another bowl, combine the dry ingredients and whisk. Flour, baking powder, baking soda and salt.
9. Add half of the dry mixture to the milk mixture and combine.
10. Add the other half of the dry ingredients and the fresh blueberries.
11. Fold until combined. Do not over mix it.
12. Scoop mixture into the muffin cups and fill it just above the top.
13. Bake for 30 minutes.
