Blueberries are one of the fruits that are high in antioxidants. When you add them to muffins, pancakes and breads you have a delicious treat. they grow on bushes that are about knee high.

Although you can purchase blueberries in the supermarket, the most fun is to pick them yourself. Just make sure you don't eat them all - you do have to bring some home.

You can freeze blueberries so that you can enjoy this tasty fruit all year long.

Blueberry Pancakes

Breakfast Pancakes with Blueberries

Ingredients:

1 cup flour
1 egg
1 cup milk
2 tsp baking powder

Directions:

Beat all ingredients together until batter is smooth. Fold in 1 cup blueberries.

Fry in oil until pancakes are brown on both sides.

Blueberry Fritters

Preheat fat to 375 degrees

Sift or blend together:

1 1/4 cups flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar

Beat 1 egg with 2/3 cups of milk

Add the beaten egg to the dry ingredients and use an electric mixer to beat until the batter is smooth.

Stir in 1 cup of blueberries.

Drop the batter by spoonfuls into the deep fat.

Fry for 3 -4 minutes, turning the fritters until they are brown on both sides.

Drain on paper towels.

This recipe makes 20 blueberry fritters.

Blueberry Crunch

Ingredients:

2 cups blueberries
1/4 cup sugar
1 cup flour
1 cup brown sugar
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup butter

Directions:

Place the blueberries in an 8-inch baking dish. Sprinkle the berries with sugar.

Mix the flour, brown sugar, salt and cinnamon together. Rub the butter into this mixture until it is crumbly.

Spinkle the mixture over the blueberries.

Bake for 30 minutes at 350 degrees.

Blueberry Cake

Ingredients:

1/4 cup butter
1 cup brown sugar
1 egg
1 tsp. vanilla
1 cup flour
1 tsp. baking powder
2 cups blueberries

Directions:

Cream butter and sugar. Add egg and vanilla to the creamed mixture and mix well. Sift the flour and baking powder together and add to the mixture. Fold in the blueberries.

Bake for 350 degrees for 35 minutes.

Blueberry Wine

Ingredients:

2 quarts of blueberries
4 quarts of boiling water
6 cups of sugar
3 cups of prunes
1 pkg. yeast

Directions:

Crush berries, place in boiler and add boiling water. Bring this to a boil and cook for ten minutes. Strain the juice and add 6 cups of sugar to 1 gallon of juice.

Cool the mixture until it is lukewarm. Add prunes and the package of yeast.

Cover with a cloth and let stand in a warm place for 2 months.

Strain and then bottle and cork.

    You know, I don't believe I've ever tried blueberry wine ... sounds tasty! Sure do love them in muffins, though.

    Great lens of blueberry recipes. I just planted four blueberry bushes, so I look forward to being able to juice and bake with blueberries again next year!
