Sweet and Savory Bread and Butter Pickles
Seriously these are the best homemade bread and butter pickles you will ever pick out of a jar and put on a sandwich or gobble down by the spoonful! My garden each year is planted with these bread and butter pickles in mind.
I had grand ideas of tomatoes, different kinds of squash, plus more, then I read an article...oh lordy please don't make me remember, although I think it was Sunset, Mother Earth News or some similar magazine article that spoke of planting what you really want to harvest and will actually use. My bread and butter pickles came to the forefront and confirmed my decision to plant cucumbers, sweet onions, green peppers, and garlic. I rely on finding the rest of the ingredients for my bread and butter pickles at my local farmer's market or green grocer.
Psst! My jars are usually garage sale finds...even the dusty, been in boxes for years can be scrubbed clean with a bit of soaking and elbow grease. Note: Run your finger around the rim to make sure there are no defects...otherwise your jars will not seal properly with water bath or pressure cooker processing.
So without further ado and chit chat...I am great at making a short story longer, read on to get the recipe to awe all your family and friends :)

2011 Bread and Butter Pickles
Sliced, spiced and ready to boil!
This year, just when I thought I'd go crazy because our cucumber harvest sucked, Bi-Zi Farms outta Vancouver, Washington pulled through for us. Their pickling cucs were crispy, unblemished and free of clumps of dirt...grrs! to picking up cases elsewhere that required a major bath from the garden hose before even considering bringing them into my kitchen.
Besides the awesome cucumbers, we added green bell peppers and garlic to our basket...and wow! to say fresh from the farm would be too simple. Seriously, the bell peppers still had green leaves hanging from the stems and the garlic was so fresh that when I chopped into the cloves juice drizzled from the knife. Mmm!
SOLD! And grown in the Pacific NW in the good old U S of A!! Make sure you stop by Bi-Zi Farms if you are ever in the area...that would be Vancouver, WA, by the way!
The Recipe For The Best Ever Bread and Butter Pickles
Measurements count when canning, no fudging allowed :)

- Serves: 8 pints
Scroll down for a few of my own tips and tricks for making these bread and butter pickles.
Ingredients
- 4 quarts sliced unpared medium cucumbers (about 30 5 inch cucs)
- White onions; thinly sliced to equal 6 cups
- Green peppers; seeded and thinly sliced to equal 1 2/3 cups
- 3 cloves garlic; peeled and scored
- 1/3 cup granulated pickling salt
- Cracked ice; a big bag or two depending upon how many pickles you are making
- 5 cups sugar
- 3 cups cider vinegar
- 1 1/2 teaspoons turmeric
- 1 1/2 teaspoons celery seed
- 2 tablespoons mustard seed
Instructions
Combine cucumber, onion, green pepper, and whole garlic cloves. Add salt; cover with cracked ice; mix ingredients thoroughly (this is where I may have 4 - 5 buckets sitting around the kitchen or down the hallway :) Let stand 3 hours; drain well. Remove garlic. Place in a large pot.
Fill your 'sterilized' jars with boiling water; set aside. Combine remaining ingredients; pour over cucumber mixture. Bring the mixture just to a boil, remove from heat. Carefully empty boiling water from the jars and start filling the hot jars with your bread and butter pickles and resulting 'brine'.
Fill hot jars to 1/2 inch from top; wipe around rim with a paper towel or clean cloth, adjust lids. Process in boiling water bath for 5 minutes (start timing when water returns to boiling).

A Few of My Tips and Tricks
Lending you a helping hand
SHARING A FEW TIPS:
~ Scrub the cucumbers with a kitchen scrub brush or pad, fresh from the garden they have nubs and lots of dirt.
~ Slice an inch or so off each end of the cucumber and use an electric food slicer or mandolin for consistent size pickles.
~ Thinly slice the onions into rings, using the food slicer or a mandolin and separate into rings.
~ Quarter the green peppers and use the mandolin for consistent, very thin slices.
~ Easily peel the garlic by placing on a flat surface and pressing firmly with the side of a knife blade or flat-bottomed cup.
~ If you are purchasing your cucumbers make sure to visit the farmer's market early in the morning and pick out firm, uniform sized cucs.
~ When you are at the cooking point - don't put your head over the steaming pickles for a smell...the vinegar fumes will bring tears to your eyes. Been there done that! :-)
~ Line a table with newspaper or towels for a "pickle cooling spot". Pull them from the water bath and place on the table. For those jars that did not seal in the water bath or during the cooling process make sure they get put in the fridge.
Gotta say there is nothing more satisfying than hearing the pop...pop...pop! as the jars cool and seal!

The cookbook featured below looks like the front cover of mine, although I could not look inside to see if the pickle recipe was in it, maybe you could ask the seller. Especially if you are thinking of purchasing this cookbook AND you want the pickle recipe in it.

- Looks like a tasty recipe, I love regular dill pickles with a lot of garlic in the mix. Does this recipe have a lot of kick to it because of the mustard seed and peppers?

- No spicy-kick unless you opt to toss in a few hot peppers. I always do that with a few jars because that is how we like 'em. :)
