Sweet and Savory Bread and Butter Pickles
Seriously these are the best homemade bread and butter pickles you will ever pick out of a jar and put on a sandwich or gobble down by the spoonful! My garden this year is planted with pickles in mind.
I had grand ideas of tomatoes, different kinds of squash, plus more, then I read an article...oh lordy please don't make me remember, although I think it was Sunset, Mother Earth News or some similar magazine article that spoke of planting what you really want to harvest and will actually use. My bread and butter pickles came to the forefront and confirmed my decision to plant cucumbers, sweet onions, green peppers, and garlic. I rely on finding the rest of the ingredients for my bread and butter pickles at my local farmer's market or green grocer.
Psst! My jars are usually garage sale finds...even the dusty, been in boxes for years can be scrubbed clean with a bit of soaking and scrubbing. Note: Run your finger around the rim to make sure there are no defects...otherwise your jars will not seal properly with water bath or pressure cooker processing.

The Ingredients For The Best Ever Bread and Butter Pickles
Measurements count when canning, no fudging allowed :)
Ingredients:
4 quarts sliced unpared medium cucumbers
6 medium white onions, sliced (6 cups)
2 green peppers, seeded and thinly sliced (1 2/3 cups)
3 cloves garlic
1/3 cup granulated pickling salt
5 cups sugar
3 cups cider vinegar
1 1/2 t turmeric
1 1/2 t celery seed
2 T mustard seed

SHARING A FEW TIPS:
~ Scrub the cucumbers with a brillo pad or kitchen scrub brush, fresh from the garden they have nubs and lots of dirt.
~ Slice an inch or so off each end of the cucumber and use an electric food slicer for consistent size pickles.
~ Thinly slice the onions into rings, using the food slicer or a mandolin and separate into rings.
~ Quarter the green peppers and use the mandolin for consistent, very thin slices.
~ Easily peel the garlic by placing on a flat surface and pressing firmly with the side of a knife blade or flat-bottomed cup.
~ If you are purchasing your cucumbers make sure to visit the farmer's market early in the morning and pick out firm, uniform sized cucs.

Making the Pickles
The process is what makes em' or breaks em'!
Combine cucumber, onion, green pepper, and whole garlic cloves. Add salt; cover with cracked ice; mix ingredients thoroughly (this is where I may have 4 - 5 buckets sitting around the kitchen or down the hallway :) Let stand 3 hours; drain well. Remove garlic. Place in a large pot.
Fill your jars with boiling water; set aside. Combine remaining ingredients; pour over cucumber mixture. Bring the mixture just to a boil, remove from heat and start filling the jars.
Fill hot jars to 1/2 inch from top; wipe around rim with a paper towel or clean cloth, adjust lids. Process in boiling water bath for 5 minutes (start timing when water returns to boiling). Makes 8 pints.

- I am so excited that you want to start canning. For this particular recipe just bring to a boil, take off the heat and start filling the jars. Let us know how yours turned out.

- OMG I did not hear that news. It's very important to look for defects on your jars, use new lids, and follow the specific recipe when canning.
