For The Love of Bread

Making bread is the most satisfying of all baking for me. To take ingredients, that by themselves would rather disgusting, and turn them into a magical loaf of fresh bread is a work of art. There is nothing than the smell of hot, fresh, homemade bread that has just emerged from the oven.

One of the things I constantly hear from my friends is how amazed they are that I bake my own bread. People are so intimidated by breads. Poor yeast! It is SO misunderstood!

This Rustic Italian Bread is a relatively new recipe for me, but it has quickly become a staple in our house. Recommended for the advanced-beginner, or intermediate bread baker, this Rustic Italian Bread requires a little knowledge with how a crusty bread should feel when it is still a dough.

Best served warm with melted garlic butter, or just a spread of your favorite homemade jam.

How To Properly Measure Flour

One of the most common mistakes people make when trying to make a loaf of homemade bread is improperly measuring the flour. Flour settles in the bag during shipping, and the micro-fine particles become even more compact.

Most people will dig the measuring cup or a spoon right into the bag and level it off, but that's not not accurate and you can actually be adding up to an extra half a cup of flour per recipe. YUCK!

Do you think kneading is a pain? Well, it could be, but for me, kneading is a labor of love. When you know how to knead bread the right way, it becomes easy, and even fun.

One of the most common mistakes people make is under-kneading the bread dough. If the recipe calls for the bread to be kneaded for 6-8 minutes, that is what it really needs. Kneading allows the yeast, which is multiplying by the second, to be evenly dispersed throughout the loaf. And dispersed yeast is happy yeast.
