One of the things I constantly hear from my friends is how amazed they are that I bake my own bread. People are so intimidated by breads. Poor yeast! It is SO misunderstood!

This Rustic Italian Bread is a relatively new recipe for me, but it has quickly become a staple in our house. Recommended for the advanced-beginner, or intermediate bread baker, this Rustic Italian Bread requires a little knowledge with how a crusty bread should feel when it is still a dough.
Best served warm with melted garlic butter, or just a spread of your favorite homemade jam.

Most people will dig the measuring cup or a spoon right into the bag and level it off, but that's not not accurate and you can actually be adding up to an extra half a cup of flour per recipe. YUCK!

One of the most common mistakes people make is under-kneading the bread dough. If the recipe calls for the bread to be kneaded for 6-8 minutes, that is what it really needs. Kneading allows the yeast, which is multiplying by the second, to be evenly dispersed throughout the loaf. And dispersed yeast is happy yeast.

These dinner rolls earned me a lovely award at the county fair in 2008, and consistently make an appearance at the dinner table. It is fair to say that this is by far my most-requested recipe, and I make at least three batches a month.

- It's 7:28 am on a Saturday and I just ate a large bowl of Granola, and damn if that picture of Rustic Italian Bread invoked visions of butter slabs and honey making me hungry again! Damn you (nicely) Bread Head. LOL Great article! Now, off to make some bread!

- I once lived in Newfoundland, they would sooner go hungry then buy store bought bread. My wife is from Newfoundland, and bakes bread all the time. There is nothing like a fresh loaf of bread right out of the oven. Thank you for the recipes too.I shall have my wife try them.
