    It's 7:28 am on a Saturday and I just ate a large bowl of Granola, and damn if that picture of Rustic Italian Bread invoked visions of butter slabs and honey making me hungry again! Damn you (nicely) Bread Head. LOL Great article! Now, off to make some bread!

    I once lived in Newfoundland, they would sooner go hungry then buy store bought bread. My wife is from Newfoundland, and bakes bread all the time. There is nothing like a fresh loaf of bread right out of the oven. Thank you for the recipes too.I shall have my wife try them.

    I must admit that I am one to be afraid of yeast....

    But my sister is coming up to see me in a few weeks
    and she has promised me to teach me how to bake bread.

    bread machines are great. just knowing how to make your own bread is priceless. i remember my grandmother kneading and working her magic in the kitchen when i was a small tot.

    Nice lens! I also love to bake bread. and I don't own a bread machine and have never used one! I've never seen that trick before for shaping rolls. I'll have to try it sometime!

    Great lens. All I knead-ed to know to improve my bread baking skills. I am definitely NOT a bread machine user -- I find kneading dough is a great way to reduce tension -- and there is nothing like the smell of baking bread -- except maybe tasting it fresh from the oven. Just wish I had more time to indulge but making the other kind of dough in this economy eats up a lot more of my time than it used to...

    I also bake bread by hand, not with a machine, so love this lens. I hope you will add some whole wheat or whole grain recipes to these all white flour ones. 5 stars and I joined your fan club.

    This lens has perfect timing for me. I was at a Mennonite store this week and picked up some 9 grain flour that I want to try and make some homemade bread with. Wish me luck!

    I'm not a bread maker, but your lens makes it tempting! I do remember that smell, though, when my grandma made it once in a blue moon... wish they could bottle that or make scented candles of it! :o)

    I would love to be able to make some nice crusty Italian bread. Could you describe how the dough should feel when it's done kneeding? Should it be thick and heavy, watery?

    Ah! the smell of fresh bread straight out the oven and ready to be eaten. Must rank as one of the nicest pleasures in the world. I could do with some of that right now and congratulations on LOTD.

    MMMMMMM, your bread looks absolutely delicious! Maybe it's self preservation that I don't make bread from scratch...I'm pretty sure if I did I'd weigh about 400lbs (there's nothing like homemade bread fresh from the oven :o) A lovely lens.

    In the picture of your Rustic Italian Bread is the bread on a cooling rack or did you use this rack in the oven as well? Forgive the newbie question, just had to ask.

    You are absolutely right in having the best ingredients. It makes all the difference in the world. I went out to my herb garden for some fresh rosemary just this morning. I think the best ingredients are fresh from the garden when you can.

    Bread, the "staff of life". So far, there is no aroma like fresh bread from the oven to please and awaken my appetite. Then apply country churned butter and enjoy the best life has to offer.

    I had no idea that flour settled that much, which might account for some of my less-than-stellar baking exploits. I also didn't know that King Arthur Flour is employee owned. Good to know! Next time I buy flour I'll be sure to go with them.

    Thank you! I know a lot of people who cheat with the bread machine. For me, there is nothing more beautiful than feeling dough in my hands. That said, when I am kneading something for 15 minutes, I often feel differently! :P
