Have leftovers from last night's dinner? A frittata is your breakfast/brunch meal. A satisfying Italian comfort food.

8-10 eggs
What do you have in the fridge? Last nights roasted potatoes? Maybe some leftover veggies? Pasta?

They can go into the frittata. Your frittata is limited only by your imagination and your pantry.

You can always sauté an onion, add some peppers and/or mushrooms. Is your garden abundant in zucchini? A great addition.

Use a non-stick pan.
A little olive oil in the bottom
Add your ingredients
Beat the eggs and add.

Cook over medium heat. Check the bottom for a golden brown. Lower the heat and use a cover until the eggs are set. Slide out onto a plate and enjoy the compliments.

For over-achievers: Before it's completely set, slide the frittata onto a plate, and then slide the un-browned side back into the pan to finish. A little more olive oil may be necessary.

For classicists: There are frittata pans. They come in a set to easily flip the frittata over.

    I haven't tried this kind of Omelette. Is it different from the regular omelette that we usually cook during morning? I am having a little curious about this type of Italian Food. Italian Omelette plus Italian Panettone, all I can say is AWESOME COMBO!
